Ingredients
  

  • 2 tbsp butter
  • 2 garlic cloves
  • 1 bay leaf
  • 1 onion (chopped)
  • 500 gram pumpkin (chopped) peeled off
  • ½ tsp salt
  • ½ tsp pepper powder

Instructions
 

  • Firstly, heat the 2 tbsp of butter in a pressure cooker
  • Add in the bay leaf and garlic cloves, saute
  • Now add chopped onion and saute
  • Then add chopped 500 gram pumpkin and saute
  • Pour in 2 cups of water, cover the lid and pressure cook for 2 whistles
  • open the lid and add ½ tsp of salt and ½ tsp pepper
  • Take of the bay leaf from the pressure cooked pumpkin
  • using a strainer, strain the cooked pumpkin, reserve the veggie stock for later use
  • After the cooked pumpkin got cooled well, blend the cooked pumpkin smoothly
  • transfer the pumpkin paste from blender jar to a container
  • Now add in veggie stock 1 or 2 cups to pumpkin paste
  • Garnish with cream, add salt and pepper if it is necessary
