CoconutMilk Pulao

Ingredients
  

  • 2 tbsp ghee/oil
  • 1 tsp black cumin
  • 3 cardamom
  • 2 cloves
  • 1 inch cinnamon
  • 1 Marathi mokku
  • 1 star anise
  • 1 green chilly
  • 1 tbsp cashews
  • 1 tbsp ginger garlic paste/crushed
  • 1 onion(chopped)
  • 1/4 cup green peas
  • 1 handful mint leaves
  • 1 handful coriander leaves
  • 1/2 tsp garam masala powder
  • 1 cup basmati rice (soaked for 20 minutes)
  • 11/2 cup coconutmilk
  • salt to taste

Instructions
 

  • Heat the ghee/oil in pressure cooker, add black cumin to splutter
  • Add bay leaf, cardamom, cinnamon, cloves, star anise
  • Add cashews and saute
  • Add green chilly, ginger garlic paste and saute
  • Add chopped onion, saute till turns into translucent
  • Add green peas and saute
  • Add a handful of mint leaves and coriander leaves, saute it for 30 seconds till it shrinks
  • Add salt and garam masala powder and saute
  • Add soaked basmati rice and mix well
  • Add coconut milk and mix
  • cover the lid, let it cook for 1 whistle in medium flame
  • open the lid after pressure released, fluff it with a spoon.
    Now the coconut milk pulao is ready
