CoconutMilk Pulao

Ingredients
  

  • 2 tbsp ghee/oil
  • 1 tsp black cumin
  • 3 cardamom
  • 2 cloves
  • 1 inch cinnamon
  • 1 Marathi mokku
  • 1 star anise
  • 1 green chilly
  • 1 tbsp cashews
  • 1 tbsp ginger garlic paste/crushed
  • 1 onion(chopped)
  • 1/4 cup green peas
  • 1 handful mint leaves
  • 1 handful coriander leaves
  • 1/2 tsp garam masala powder
  • 1 cup basmati rice (soaked for 20 minutes)
  • 11/2 cup coconutmilk
  • salt to taste

Method
 

  1. Heat the ghee/oil in pressure cooker, add black cumin to splutter
  2. Add bay leaf, cardamom, cinnamon, cloves, star anise
  3. Add cashews and saute
  4. Add green chilly, ginger garlic paste and saute
  5. Add chopped onion, saute till turns into translucent
  6. Add green peas and saute
  7. Add a handful of mint leaves and coriander leaves, saute it for 30 seconds till it shrinks
  8. Add salt and garam masala powder and saute
  9. Add soaked basmati rice and mix well
  10. Add coconut milk and mix
  11. cover the lid, let it cook for 1 whistle in medium flame
  12. open the lid after pressure released, fluff it with a spoon.
    Now the coconut milk pulao is ready
