bottle gourd kheer | sorakkai payasam

Ingredients
  

  • 2 tbsp ghee
  • 1 tbsp cashews
  • 1 tbsp almonds
  • 1 tbsp raisins
  • 2 cup shredded bottle gourd 500gram bottle gourd
  • 1 litre milk
  • ½ tsp cardamom powder

Method
 

shredding the bottle gourd:
  1. Firstly peel the bottle gourd nicely,
  2. Secondly, scrap the seed portion from it
  3. once the all the seed portion removed completely, it is ready to grate
  4. Grate it with large sized holes in the grater
Making Bottle gourd kheer:
  1. Firstly, heat 2 tbsp of ghee in a heavy-bottomed pan (or non-stick pan). roast the cashews and almonds, and take off.
    Next fry the raisins to swell up
  2. In the same pan with remaining ghee, add in grated bottle gourd, saute it for 5 minutes in medium flame
  3. Now pour in 1 litre of milk, bring into a boil, and then reduce the flame to medium, stir occasionally
  4. Heat it for 15 minutes by keeping the flame medium
  5. And then add ½ cup of sugar, stir well
  6. Again keep the flame medium for 5 minutes (stir occasionally)
  7. turn off the flame then add ½ tsp of cardamom powder and mix
    Next add fried nuts and raisins
