Carrot rice

Ingredients
  

  • 1 tbsp oil
  • 1 star anise
  • 1 bay leaf
  • 1 tsp cumin
  • 3 garlic cloves
  • 1 onion (finely chopped)
  • few curry leaves
  • 2 cups carrot
  • ¼ tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp pepper powder
  • ¼ cup capsicum/bell pepper(chopped)
  • 1 cup rice(cooked)
  • 1 tbsp ghee
  • salt to taste
  • coriander leaves for garnish
  • few cashew nuts (fried in ghee) (optional)
  • 1/2 to 1 tsp pepper powder

Method
 

  1. Heat the oil in a pan, add bay leaf, splutter cumin, then add curry leaves
  2. Then add chopped garlic, onion, saute it turns into translucent
  3. put thinly shredded carrot and mix
  4. Add turmeric powder and salt, mix well,
  5. Now add cubes of capsicum and saute
  6. Put 1 tsp of cumin powder
  7. Add cooked rice along with pepper powder and ghee, mix well
  8. Add fried cashew nuts and coriander leaves.
    Now the carrot rice is ready
