Ingredients
  

  • 1 tbsp oil
  • 1 star anise
  • 1 bay leaf
  • 1 tsp cumin
  • 3 garlic cloves
  • 1 onion (finely chopped)
  • few curry leaves
  • 2 cups carrot
  • ¼ tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp pepper powder
  • ¼ cup capsicum/bell pepper(chopped)
  • 1 cup rice(cooked)
  • 1 tbsp ghee
  • salt to taste
  • coriander leaves for garnish
  • few cashew nuts (fried in ghee) (optional)
  • 1/2 to 1 tsp pepper powder

Instructions
 

  • Heat the oil in a pan, add bay leaf, splutter cumin, then add curry leaves
  • Then add chopped garlic, onion, saute it turns into translucent
  • put thinly shredded carrot and mix
  • Add turmeric powder and salt, mix well,
  • Now add cubes of capsicum and saute
  • Put 1 tsp of cumin powder
  • Add cooked rice along with pepper powder and ghee, mix well
  • Add fried cashew nuts and coriander leaves.
    Now the carrot rice is ready
