snake gourd stir fry

Ingredients
  

  • 1 tbsp oil
  • ½ tsp mustard seeds
  • few curry leaves
  • 1 Kashmiri red chilly
  • 1 onion (chopped)(small-sized)
  • 1 tsp ginger garlic paste (or crushed)
  • 250 gm snake gourd (chopped)
  • ½ tsp Kashmiri red chili powder
  • ½ tsp garam masala powder
  • ¼ tsp turmeric powder
  • 10 cube paneer
  • salt to taste
  • 1 tbsp coriander leaves (chopped)

Method
 

Prior work:
  1. Firstly, peel off the snake gourd, rise it in water
  2. chop into 1 inch thin slices, keep aside
  3. Crumble 10 cubes of paneer well and keep aside
For stir fry:
  1. Heat the oil in a pan, splutter ½ tsp of mustard seeds, add in curry leaves, 1 Kashmiri red chilly
  2. Now add chopped onion, saute it well till it becomes glossy
  3. Put chopped snake gourd, saute it for a minute, add salt
  4. Add the spice powders, saute it for 30 seconds in low flame
  5. Add 2 tbsp of water, keep the flame low, lid on, cook it for 5 minutes in covered condition, give stir in regular intervals
  6. open the lid, check if the veggie got cooked, if so add crumbled paneer, mix well
    Add salt if required
  7. Garnish with coriander leaves
