tamil food recipes | raw mango kulambu

Ingredients
  

To make coconut paste:
  • ½ cup Shredded coconut
  • 1 tsp cumin
To make mango kulambu:
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ¼ tsp fenugreek seeds
  • 2 green chilly
  • 4 garlic cloves
  • few curry leaves
  • 50 gram shallots (small onion)
  • 1 mango (diced into cubes)
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 4 tsp Kashmiri red chilly powder
  • 2 tomato(chopped)
  • ½ cup tamarind extract
  • 1 cup water
  • salt to taste

Method
 

To make coconut paste:
  1. In a blender jar, take ½ cup of shredded coconut and 1 tsp of cumin seeds
    Blend it into a fine paste with enough water
    Keep aside
To make mango kulambu:
  1. Heat 2 tbsp of oil in a pan, splutter ½ tsp of mustard seeds, ½ tsp of cumin, ¼ tsp of fenugreek seeds, 2 green chilies, few curry leaves, 3 garlic chopped, 50 grams of shallots
    saute well until the shallots become translucant
  2. Now add in mango pieces and saute for 1 minute
  3. Next, add in spice powders, 1/2 tsp of turmeric powder, 1 tbsp of coriander powder, 4 tsp of Kashmiri red chilly powder, mix well in low flame for 30 seconds
  4. And then, add in 2 tomatoes chopped, saute well until it becomes mushy
  5. Now pour in 1/2 cup of tamarind extract and 1/2 cup of water
  6. Mix well. cover it with a lid and cook it for 5 minutes on medium flame
  7. Next, add in ground paste along with 1/2 cup of water, boil it for 5 more minutes on low flame.
  8. finally, turn off the flame and garnish with coriander leaves
