Method
To make coconut paste:
- In a blender jar, take ½ cup of shredded coconut and 1 tsp of cumin seedsBlend it into a fine paste with enough waterKeep aside
To make mango kulambu:
- Heat 2 tbsp of oil in a pan, splutter ½ tsp of mustard seeds, ½ tsp of cumin, ¼ tsp of fenugreek seeds, 2 green chilies, few curry leaves, 3 garlic chopped, 50 grams of shallots saute well until the shallots become translucant
- Now add in mango pieces and saute for 1 minute
- Next, add in spice powders, 1/2 tsp of turmeric powder, 1 tbsp of coriander powder, 4 tsp of Kashmiri red chilly powder, mix well in low flame for 30 seconds
- And then, add in 2 tomatoes chopped, saute well until it becomes mushy
- Now pour in 1/2 cup of tamarind extract and 1/2 cup of water
- Mix well. cover it with a lid and cook it for 5 minutes on medium flame
- Next, add in ground paste along with 1/2 cup of water, boil it for 5 more minutes on low flame.
- finally, turn off the flame and garnish with coriander leaves
