Veg White Kurma

Ingredients
  

  • 2 tbsp oil
  • 1 bay leaf
  • 1 inch cinnamon
  • 1 star anise
  • 3 cardamom
  • few curry leaves
  • 1 onion (finely chopped)
  • 1 tbsp ginger-garlic crushed/pasted
  • 1 carrot (chopped)
  • 8 beans
  • 1 cup cauliflower(chopped)
  • 1 potato(chopped)
  • 1/4 cup green peas
To Grind:
  • 1 cup coconut (shredded)
  • 1 inch cinnamon
  • 3 cloves
  • 3 green chilly
  • 5 shallots
  • 1 tbsp cashews/ roasted gram
  • 1 tsp fennel seeds
  • 1 tsp poppy seeds
  • little water

Method
 

To grind:
  1. Grind all the ingredients mentioned above (shredded coconut, cinnamon, green chilly, shallots, cashews/roasted gram, fennel seeds, poppy seeds and add little water
To cook:
  1. First of all, in a pressure cooker, heat the oil, add bay leaf, cinnamon, cardamom, star anise, and curry leaves, saute till get nice aroma
  2. secondly, add chopped onion and saute,
  3. thirdly, add ginger-garlic crushed, saute it till both onions get translucent.
  4. and then, add all the vegetables one by one. (carrot, beans, potato, cauliflower, and peas), saute for 2 minutes
  5. after that, add the ground paste and saute for 1 minute.
  6. Pour in a cup of water
  7. cover the lid cook it for 2 whistles
  8. open the lid after the pressure completely released
  9. Finally, garnish with coriander leaves
