Ingredients
  

  • 250 gram carrot (shredded) 2 cups of shredded carrot
  • ¼ cup cashews (soaked in hot water for 15 minutes)
  • 1 tbsp ghee
  • 1 tbsp cashews for garnish
  • 1 tbsp raisins for garnish
  • 3 cups milk
  • ½ cup sugar
  • ½ tsp cardamom powder

Method
 

For Cashew paste:
  1. Take 1/4 cup of cashew in a bowl
  2. soak it in hot water for 15 minutes
  3. After 15 minutes, drain off the water
  4. put it in a blender jar, blend it to a fine paste with little water, keep aside
For kheer / Payasam:
  1. Firstly, heat 1 tbsp of ghee in a pan
  2. Secondly, fry the cashews first till golden brown and then raisins to swell up
  3. Thirdly, collect cashew and raisins from the pan, keep aside for garnish at the end
  4. In the same pan with ghee, add 2 cups of (250gm) shredded carrot, saute it for 3 minutes
  5. Now pour 3 cups of milk, bring into boil for 3 minutes, stirring at regular intervals
    scrap off the milk solids at the sides of the pan and mix
  6. Add cashew paste and mix well,
  7. bring into boil for 1 minute
  8. Put ½ cup of sugar and stir well, keep the flame in low for 2 mins

  9. Now add ½ tsp of cardamom powder and mix, turn off the flame
  10. Finally, add fried cashews and raisins
  11. serve in hot or cold condition
