carrot kheer | carrot payasam
Ingredients
- 250 gram carrot (shredded) 2 cups of shredded carrot
- ¼ cup cashews (soaked in hot water for 15 minutes)
- 1 tbsp ghee
- 1 tbsp cashews for garnish
- 1 tbsp raisins for garnish
- 3 cups milk
- ½ cup sugar
- ½ tsp cardamom powder
Instructions
For Cashew paste:
- Take 1/4 cup of cashew in a bowl
- soak it in hot water for 15 minutes
- After 15 minutes, drain off the water
- put it in a blender jar, blend it to a fine paste with little water, keep aside
For kheer / Payasam:
- Firstly, heat 1 tbsp of ghee in a pan
- Secondly, fry the cashews first till golden brown and then raisins to swell up
- Thirdly, collect cashew and raisins from the pan, keep aside for garnish at the end
- In the same pan with ghee, add 2 cups of (250gm) shredded carrot, saute it for 3 minutes
- Now pour 3 cups of milk, bring into boil for 3 minutes, stirring at regular intervalsscrap off the milk solids at the sides of the pan and mix
- Add cashew paste and mix well,
- bring into boil for 1 minute
- Put ½ cup of sugar and stir well, keep the flame in low for 2 mins
- Now add ½ tsp of cardamom powder and mix, turn off the flame
- Finally, add fried cashews and raisins
- serve in hot or cold condition

I have taken 2 big carrots weighs 250 gm together
- Firstly, wash the carrots, and wipe off after that
- and then peel off the carrots carefully with the peeler
- Cut off the edges meanwhile
- shred it using a grater and keep aside for later use
