Ingredients
  

  • 250 gram carrot (shredded) 2 cups of shredded carrot
  • ¼ cup cashews (soaked in hot water for 15 minutes)
  • 1 tbsp ghee
  • 1 tbsp cashews for garnish
  • 1 tbsp raisins for garnish
  • 3 cups milk
  • ½ cup sugar
  • ½ tsp cardamom powder

Instructions
 

For Cashew paste:

  • Take 1/4 cup of cashew in a bowl
  • soak it in hot water for 15 minutes
  • After 15 minutes, drain off the water
  • put it in a blender jar, blend it to a fine paste with little water, keep aside

For kheer / Payasam:

  • Firstly, heat 1 tbsp of ghee in a pan
  • Secondly, fry the cashews first till golden brown and then raisins to swell up
  • Thirdly, collect cashew and raisins from the pan, keep aside for garnish at the end
  • In the same pan with ghee, add 2 cups of (250gm) shredded carrot, saute it for 3 minutes
  • Now pour 3 cups of milk, bring into boil for 3 minutes, stirring at regular intervals
    scrap off the milk solids at the sides of the pan and mix
  • Add cashew paste and mix well,
  • bring into boil for 1 minute
  • Put ½ cup of sugar and stir well, keep the flame in low for 2 mins

  • Now add ½ tsp of cardamom powder and mix, turn off the flame
  • Finally, add fried cashews and raisins
  • serve in hot or cold condition

Stepwise Picture Recipe:

Take 1/4 cup of cashew in a bowl, soak it in hot water for 15 minutes

After 15 minutes, blend it with little water to make a fine paste

For making payasam:

Firstly, Heat 1 tbsp of ghee in a pan, fry cashews first

keep them aside

In the same pan with ghee, put the shredded carrot,

saute it for 3 minutes

Now pour 3 cups of milk

mix well

boil it for 3 minutes

now add cashew paste, mix well, bring into a boil

And then add 1/2 cup of sugar, mix well
keep the flame in low for 2 mins, scrape off the milk solids sticks over the pan
Add 1/2 tsp of cardamom powder, mix well
Finally, add fried cashews and raisins
Serve it in hot or cold condition as well
It would be a delicious and refreshing drink for sure
Shredding the carrot:

I have taken 2 big carrots weighs 250 gm together

  • Firstly, wash the carrots, and wipe off after that
  • and then peel off the carrots carefully with the peeler
  • Cut off the edges meanwhile
  • shred it using a grater and keep aside for later use
