This Pongal has simple ingredients like raw rice, moong dal, jaggery, cardamom, edible camphor, and nuts. In the village. (I didn’t add edible camphor here) on the day of Pongal, people make Pongal of two types that are sweet Pongal and ven Pongal outside of the house or in front of their house. Ingredients
For pressuer-cooking rice and dal
- 1 cup raw rice
- 2 tbsp moong dal
- 4 cup water
- ¼ tsp salt
For jaggery syrup:
- 2 cup jaggery (grated/ powdered)
- ½ cup water
For pongal:
- ½ cup ghee
- 2 tbsp ghee
- 1 tbsp cashews
- 1 tbsp raisins
- ½ tsp cardamom powder
Instructions
For pressure-cooking rice and dal:
- Firstly, take 1 cup of raw rice, and 2 tbsp of moong dal. wash it thoroughly
- Secondly, Put washed rice and moong dal in a pressure cooker
- Thirdly, add ¼ tsp salt and 4 cups of water
- Next, pressure cook it for 5 whistles
For jaggery syrup:
- Take 2 cups of jaggery in a pan, add ½ cup of water
- Mix well
For frying cashews and raisins
- In another pan, heat 2 tbsp of ghee, first, add cashews and then raisins, and fry it, keep aside
For making pongal:
- After pressure is released, open the lid, mash it masher or with ladle
- Add jaggery syrup by straining the jaggery syrup over the Pongal, mix well
- Add ½ cup of ghee over the Pongal,
- Now, add ½ tsp cardamom powder
- Finally, Add fried cashews and raisins, and mix well
