Method
Blend:
- Firstly, take the 3 cups of shredded coconut in a blender
- Blend it to get a small shred of coconut and keep aside
To make burfi:
- Heat 1 tbsp 0of ghee in a pan
- Add in cashew pieces, roast it till it becomes slightly brown, and then take off
- In the pan with the same ghee, add in blended coconut shred, fry it in medium flame for 2 minutes
- Now add 1½ cup of sugar and mix
- Sugar melts and oozes out moisture, keep stirring at medium flame
- At one stage all the moisture has gone, the mixture gathers as a mass
- In that stage, add 1/4 tsp of cardamom powder, and fried cashews and mix well
- Immediately transfer the mixture into parchment sheet overlaid tray
- spread and level it up
- Leave it for 10 minutes
- then cut into pieces, and serve
