Method
For grinding the cashews:
- Take the 1 cup of cashews in a blender (make sure the cashews are at room temperature)
- Give a pulse, mix it with a spoon, and give the pulseRepeat the same until it gets powdered
- Within 5 to 6 pulses, we can make the cashews into powder
Making kaju katli:
- Heat the pan, pour in ¼ cup of water and ½ cup of sugar, mix well
- Heat it in medium flame until it reaches the 1-string consistency
- then add in powdered cashews and ¼ cup of milk and mix well
- keep mixing in low to medium flame at one point it becomes more sticky and thick
- then add 1tsp of ghee and mix in low temperature. when it becomes thick, gathered as mass
- Transfer this mixture to ghee applied parchment paper, wait for it to cool slightly
- then knead the mixture for 1 minute
- roll into a thin sheet
- slice into your desired shape
