Desserts using nuts always taste scrumptious and also healthy. we can make this sweet by grinding and mixing(cooking) with sugar syrup until it becomes thick fudge and then we can slice into burfi as we usually do it for making other burfis. we usually buy this kaju katli in sweet shops, but knowing how to make it, that will help you during the festive season.
Things to know while grinding the cashews into powder:
When you powder the cashews, make sure your cashews are at room temperature, If you are residing in cold regions, just bring the cashews to room temperature by any of the following ways
For that,
- you can place the cashews in the hot oven for 2 minutes,
- keep it under sunlight for 30 minutes,
- dry roast the cashews on low flame for 1 minute.
Don’t grind it to a long stretch in the blender. Just give pulse and mix with fork or spoon. Repeat this until we get powdered cashew

So use any one of the methods to bring the cashew to room temperature and to get it powdered.

kaju katli recipe | kaju burfi | cashew burfi
Ingredients
- 1 cup cashews 150 gram
- ½ cup sugar 100 gram
- ¼ cup water
- ¼ cup milk
- 2 tsp ghee
Instructions
For grinding the cashews:
- Take the 1 cup of cashews in a blender (make sure the cashews are at room temperature)
- Give a pulse, mix it with a spoon, and give the pulseRepeat the same until it gets powdered
- Within 5 to 6 pulses, we can make the cashews into powder
Making kaju katli:
- Heat the pan, pour in ¼ cup of water and ½ cup of sugar, mix well
- Heat it in medium flame until it reaches the 1-string consistency
- then add in powdered cashews and ¼ cup of milk and mix well
- keep mixing in low to medium flame at one point it becomes more sticky and thick
- then add 1tsp of ghee and mix in low temperature. when it becomes thick, gathered as mass
- Transfer this mixture to ghee applied parchment paper, wait for it to cool slightly
- then knead the mixture for 1 minute
- roll into a thin sheet
- slice into your desired shape

Note:
- Make sure the cashews are at room temperature before making the cashew into powder.
- To make powder, just few pulses with mixing is enough
- you can add cardamom powder if you wish for (kaju katli recipe)
- Instead of parchment sheet, we can use aluminum foil
- In case, if we don’t have parchment or aluminum foil, you can use a roti rolling board and pin after greased with little ghee
