mangalore bonda | goli bajji recipe

Ingredients
  

  • 1 cup maida (all-purpose flour)
  • ¼ cup rice flour
  • ¼ cup shredded coconut
  • ¼ cup chopped onion (1 small size onion)(chopped)
  • 1 tbsp finely chopped ginger
  • 1 green chilly (finely chopped)
  • 1 spring curry leaves (finely chopped)
  • 2 tbsp coriander leaves (finely chopped)
  • cup curd
  • 1 tsp crushed pepper
  • 1 tsp cumin
  • salt to taste
  • 4 tbsp water
  • 1/8 tsp baking soda

Method
 

For Bonda batter:
  1. Firstly, In a mixing bowl, take 1 cup of maida(all-purpose flour), ¼ cup rice flour and ¼ cup shredded coconut
  2. And ¼ cup chopped onion, 1 green chilly chopped, 1 tsp cumin seeds, 1 tsp crushed pepper, 1 spring curry leaves chopped, 2 tbsp coriander leaves chopped and some salt (put 1/2 tsp first, and then you can adjust)
  3. Just mix the dry ingredients well and evenly
  4. And then pour in 1 ¼ cup of curd/yoghurt, give a mix
  5. It must not be flowy consistency. It should be like dropping consistency
  6. cover and Rest this batter for 30 minutes
  7. After 30 minutes, just mix the batter for 3 minutes
  8. Finally, add a pinch of baking soda, mix well, It is ready for frying
Frying the bonda:
  1. To begin with, Heat the oil in a pan, once it heated well, reduce the heat to medium
  2. then drop the batter like small balls
  3. fry and stir meanwhile
  4. Once it turns the golden brown color, gently take off the bonda
  5. Serve it hot along with coconut chutney
