mysore bonda recipe|mangalore bonda | goli bajji recipe It is also called as Mysore bonda. It is a good tea time snack with coconut chutney. simple coconut chutney recipe. This bajji will crisp outside and the extremely soft portion inside that will make you surprise. It is also called as Mysore bonda. It is a combination of flour with curd along with some spice mixtures like ginger, green chilly, etc. So do try it

What is the difference between our normal bonda and mangalore/ mysore bonda?
  • In this bonda we are using maida (all-purpose flour) and also rice flour instead of besan flour (chickpea flour)
  • for making batter we ll be using curd instead of water
  • For adding spice we are adding green chillies and ginger, cumin, and also, pepper
  • 30 minutes resting time needed for the batter to get fluffy

Ingredients
  

  • 1 cup maida (all-purpose flour)
  • ¼ cup rice flour
  • ¼ cup shredded coconut
  • ¼ cup chopped onion (1 small size onion)(chopped)
  • 1 tbsp finely chopped ginger
  • 1 green chilly (finely chopped)
  • 1 spring curry leaves (finely chopped)
  • 2 tbsp coriander leaves (finely chopped)
  • 1¼ cup curd
  • 1 tsp crushed pepper
  • 1 tsp cumin
  • salt to taste
  • 4 tbsp water
  • 1/8 tsp baking soda

Instructions
 

For Bonda batter:

  • Firstly, In a mixing bowl, take 1 cup of maida(all-purpose flour), ¼ cup rice flour and ¼ cup shredded coconut
  • And ¼ cup chopped onion, 1 green chilly chopped, 1 tsp cumin seeds, 1 tsp crushed pepper, 1 spring curry leaves chopped, 2 tbsp coriander leaves chopped and some salt (put 1/2 tsp first, and then you can adjust)
  • Just mix the dry ingredients well and evenly

  • And then pour in 1 ¼ cup of curd/yoghurt, give a mix
  • It must not be flowy consistency. It should be like dropping consistency
  • cover and Rest this batter for 30 minutes

  • After 30 minutes, just mix the batter for 3 minutes
  • Finally, add a pinch of baking soda, mix well, It is ready for frying

Frying the bonda:

  • To begin with, Heat the oil in a pan, once it heated well, reduce the heat to medium
  • then drop the batter like small balls
  • fry and stir meanwhile
  • Once it turns the golden brown color, gently take off the bonda
  • Serve it hot along with coconut chutney

And then add in 1 tbsp of chopped ginger, 1 green chilly chopped, 1 tsp cumin, 1 tsp crushed black pepper

Then add 1 spring curry leaves chopped, 2 tbsp coriander leaves chopped and salt

Now mix all the dry ingredients first

pour in 1¼ cup curd/ yoghurt
Just mix well, It must be dropping consistency like this, (not flowing consistency), (it must be like ulundhu vada batter consistency)

Cover it and rest it for 30 minutes
After 30 min, just mix it with a spoon or by hand for 3 minutes, this step is for to get in the air and make it fluffy
Now add a pinch of baking soda, give a mix, and it is ready to fry
Drop the bonda mixture into small balls gently, fry it in medium flame to nice golden brown color, and then take off the bonda carefully
