rajma masala | red kidney beans masala is the spicy curry, It is a combination of whole spices rajma and onion, ginger garlic, and tomatoes This curry is a good side dish with rice, rotis, and even with dosa. It is delicious curry from Punjabi cuisine.

There are 3 types of rajma beans in the market

Red kidney beans: These are dark red in color.

Kashmiri kidney beans: These beans look small while the color is the same with red kidney beans

Chitra kidney beans: This is mustard colour beans with red patches

In this recipe, I used Red kidney beans. This beans would take more time to boil, Let us see how to make rajma masala | red kidney beans masala.

Ingredients
  

  • 1 cup Red kidney beans (rajma) soaked overnight or 8 hours
  • 2 onion 150gram
  • 4 tomato 300 gram
  • 3 garlic (big)
  • 1 inch ginger
  • 2 tbsp ghee/ oil
  • 1 bay leaf
  • 1 tsp cumin
  • 2 inch cinnamon
  • 5 cloves
  • 1 black cardamom (or 4 green cardamom)
  • 1 tbsp Coriander powder
  • 2 tsp chilly powder
  • ½ tsp cumin powder
  • ¼ tsp turmeric powder
  • ½ tsp garam masala powder
  • 1 cup water
  • 1 tsp Kasuri methi (coriander leaves

Instructions
 

Blanching and grinding:

  • First of all, we need to blanch the onion, tomato, ginger, and garlic
    Boil the water in a pot, bring into a boil, put the 2 onion chopped, 4 tomatoes chopped, ginger, and 3 big sized garlic.
  • Boil it for 3 minutes
  • Then take off from the pan, cool it
  • after that transfer into a blender jar, blend it into a fine paste and keep it aside

Making rajma masala:

  • Heat the pressure cooker, put 2 tbsp of ghee, Add the spices (1 bay leaf, 1 tsp cumin, 1 black cardamom, 5 cloves)
  • Then put 1 green chilly, saute
  • Next, put the ground paste, just give a quick stir in low flame
  • Now add the spice powders (1 tbsp coriander powder, 2 tsp kashmiri red chilly powder, ¼ tsp turmeric powder, ½ tsp cumin powder), saute it for 30 seconds
  • And then add soaked rajma, and salt
  • Pour in 1 cup of water
  • Lid on, Pressure cook this for 10 whistles, First 5 whistles in high flame and next 5 whistles in low flame

  • After pressure released naturally, open the lid
  • add ½ tsp of garam masala, mix well
  • cook it for anothr 2minutes in low flame
  • And then turn off the flame, put 1 tsp of Kasuri methi, Give a quick stir
    It is done. Spicy rajma masala is ready.

Step-wise Picture Recipe:
firstly boil the water in pot for blanching
Add in 3 garlic, 1 inch ginger, 2 onion chopped, 4 tomato chopped
Boil it for 3 minutes
take off the blanched ginger, garlic, onion and tomato
After it got cooled, transfer into a blender jar
Blend into smooth paste
Making Rajma masala:
Heat 2 tbsp of ghee in a pressure cooker
Now add the spice mentioned in the picture
Add in 1 green chilly
Then add ground paste
just give a quick stir

And then add spice powders, mix it for 30 seconds in low flame

Now add in soaked rajma

Add salt
rajma masala | red kidney beans masala
Pour in 1 cup of water
Pressure cook for 5 whistles in high flame next 5 whistles in low flame (10 whistles)

Note: 10 whistles for red kidney beans only, if you are going to use other kidney beans (like kashmiri kidney beans and chitra kidney beans) 4 whistles would be enough

Open the lid after pressure settled down naturally

Rajma got cooked well

Now add 1/2 tsp garam masala powder, mix well

Boil it for 2 minutes in low flame
rajma masala | red kidney beans masala
And then turn off the flame, Finally, add in 1 tsp kasuri methi (crushed)

Now the rajma masala | red kidney beans masala is ready to serve

Serve this masala with rice or rotis (red kidney beans masala)
Note:
  • Soaking Rajma for 8 hours or overnight is a must thing.
  • Instead of black cardamom, we can use 4 green cardamoms. But Black cardamom plays a vital role in the flavor of this masala, So add the black one if you can
  • This rajma masala is a good combination of rice and rotis
  • Only red kidney beans need to cook for 10 whistles in the pressure cooker, if you are going to use the other varieties 4 whistles will be enough to cook
