It is an instant rice mix powder, easy to make curry leaves rice using this powder. I got fresh curry leaves from one of my friend’s house. Flavourful, nutrients rich curry leaves powder can be made at the time we get the leaves in abundance.
Alterations:
Here I have used amchur powder, instead of that you can small ball of tamarind too, while using tamarind, take an amla size tamarind, fry it with the dhals and blend it it with the dhals

Ingredients
- 3 cups curry leaves (tightly packed) 75 gram
- 1 tbsp sesame oil (or coconut oil or any oil of your choice)
- 2 tbsp urad dhal
- 1 tsp cumin
- 1 tbsp channa dhal
- 1 tbsp sesame seeds
- 5 Kashmiri red chilly (5 or more, depends upon your taste) (5 would be medium spice level)
- A pinch asafoetida
- 1 tsp Amchur powder (or small size tamarind ball)
Instructions
Prior work:
- Firstly collect the curry leaves from the stalk
- wash it in running water
- wipe it using kitchen tissue or cotton towel
Sauteeing:
- Heat 1 tbsp of sesame oil in a pan
- Add 1 tsp cumin, 2 tbsp of urad dhal, 1 tbsp of channa dhal, 1 tbsp of sesame seeds, 4 Kashmiri red chilly, saute it till the dhal becomes golden brown
- Once this dhal mixture turns golden brown color, collect it into plate and keep aside
- In the same pan, add 3 cups of curry leaves
- saute it in medium flame
- when the curry leaves shrinks into half, collect it from the pan
grinding:
- when the dhal mixture and curry leaves got cooled well, firstly add the dhal mixture into blender jar with a pinch of asafoetida
- blend it coarsely first
- now add curry leaves, blend it by giving few pulse by mixing with a spoon
- blend it fine as much as possible
storing:
- store it in airtight container
- Always use dry spoon to scoop it

Note:
- Storing in the refrigerator is the best option because it lengthens the life of this powder
- Also, store in a dry clean glass jar,
- Always use a dry spoon to scoop up
- Furthermore, eating spinach based foods at night becomes undigestable for most of the kids, so, it will be good main course in morning and lunch
