Ingredients
  

For roasting and grinding:

  • 1 tsp oil
  • 3 Kashmiri red chili
  • 1 inch ginger (small piece)
  • peanut size tamarind
  • 2 tbsp shredded coconut
  • 1 cup mint leaves (tightly packed)

For Making Mint rice:

  • 2 tbsp oil
  • ½ tsp mustard seeds
  • 1 tsp channa dhal
  • 1 tsp urad dhal
  • 1 Kashmiri red chili
  • few curry leaves
  • 1 onion (chopped)
  • 1 cup rice (cooked)
  • salt to taste

Instructions
 

For Roasting and grinding:

  • Heat the oil in a pan, add Kashmiri red chili, ginger tamarind, coconut, saute for a minute
  • Add mint leaves, saute it in low flame for 30 seconds
  • Allow the mixture to cool
  • Transfer the mixture to a blender jar, blend it into a smooth paste

For making Mint rice:

  • Heat the oil in a pan, splutter mustard seeds, then add channa dhal, urad dhal, Kashmiri red chili, and curry leaves, saute it for a minute
  • Add chopped onion, saute it till it becomes glossy
  • Add the ground paste, mix it well
  • Now add the cooked rice and salt, mix it evenly to get rice coated with mint paste,
