Ingredients
For roasting and grinding:

Kashmiri red chili

ginger (small piece)

tamarind

mint leaves (tightly packed)
For Making Mint rice:

oil
½
tsp
mustard seeds

tsp
channa dhal

tsp
urad dhal

Kashmiri red chili

curry leaves

onion (chopped)

rice (cooked)
salt to taste
Instructions
For Roasting and grinding:
Heat the oil in a pan, add Kashmiri red chili, ginger tamarind, coconut, saute for a minute
Add mint leaves, saute it in low flame for 30 seconds
Allow the mixture to cool
Transfer the mixture to a blender jar, blend it into a smooth paste
For making Mint rice:
Heat the oil in a pan, splutter mustard seeds, then add channa dhal, urad dhal, Kashmiri red chili, and curry leaves, saute it for a minute
Add chopped onion, saute it till it becomes glossy
Add the ground paste, mix it well
Now add the cooked rice and salt, mix it evenly to get rice coated with mint paste,
