This curry is made of shallots, garlic, round-fat red chili, curry leaves, and fennel seeds. No chilly powder or coriander powder is involved. This recipe involves, cooking mutton in a pressure cooker, And then sauteed with onion, garlic, round red chili, and tomato. The taste of this mutton curry is very unique because of the absence of our normal masala powders. Shallots are used in large numbers, which makes the curry tastier. And also, the addition of fennel seeds and curry leaves which gives a nice aroma. It is a dry curry, we can use side dish for sambar rice or rasam rice.

Chettinad mutton uppu curry
Ingredients
For cooking mutton:
- 1 tbsp sesame oil
- 1 kg mutton
- 5 dry red chili (round)
- ½ tsp turmeric powder
- 1 tsp salt
- ¾ cup water
For Making uppu curry:
- 4 tbsp sesame oil or ground nut oil we can use
- 2 tsp fennel seeds
- 20 dry red chili round
- 2 spring curry leaves
- 10 garlic
- 10 shallots (big size) 300 gram
- 1 tomato
- salt to taste
Instructions
For cooking mutton:
- Firstly, heat 1 tbsp of sesame oil pressure cooker, and add 5 dry red chilies, Saute for 1 minute,
- Next, add 1 kg mutton, and mix well
- And then add ½ tsp of turmeric powder, 1 tsp of salt
- pour in ¾ cup of water, and close it with the lid. Pressure cook it for 7 whistles
- once the pressure is gone, open the lid and keep aside for later use
For Making uppu curry:
- Heat 4 tbsp of oil, add 2 tsp fennel seeds, and the dry red chilies round, and saute for a while. next add curry leaves
- Then, 10 garlic pods, add 10 shallots, and saute well
- Now, add chopped tomato and mix well
- add cooked mutton, and mix well
- cover it with a lid, and cook on low flame until all the water content dried up.
- Saute, until the curry oozes out oil, Once it is done turn off the flame.
