Tomato soup recipe Rich bursting bright red colored tomato soup always tempts us. It would be a delicious sip with cheese biscuits/ cheese sandwich/ bread toast with butter.

Tomato has a lot of health benefits Tomatoes reduce heart diseases, a great source of vitamins and other nutrients, good for skin, prevents cancer, improves eyesight, good for hair, maintains blood pressure.

Here I have added carrot and beetroot with tomatoes for increasing the color, altogether gives you highly nutritious soup.

Alternatives for tomato soup recipe:

  1. I have added carrot and beetroot to make up the soup more nutritious if you want you can skip
  2. Instead of adding corn flour-water mixture, you can add 2, 3 potato wedges while pressure cooking the tomatoes for thickening
  3. you can use a hand blender to blend the cooked tomatoes
  4. Sometimes tomatoes (like desi tomato) would be a more sour taste, in that case, you can add a little bit of sugar to balance it

Things to be taken care in tomato soup recipe:

  1. Especially, using well-riped tomatoes will give you good taste.
  2. Always take care of the amount of salt to add in the soup, because soup does need only less salt, I have added less than 1 tsp of salt
  3. Add pepper while serving

Ingredients Method

Ingredients
  

  • 1 tbsp butter
  • 1 bay leaf
  • 4 garlic cloves
  • 1 onion
  • 1 carrot
  • ¼ beetroot
  • 4 tomato (500gm)
  • 1 cup water
  • 1 tsp corn flour
  • 1 tsp sugar
  • coriander leaves for garnish
  • salt to taste
  • pepper to taste
  • fresh cream for garnish(optional)
To make Bread toast
  • 1 tbsp butter
  • 2 bread slices

Method
 

To pressure cook the tomatoes:
  1. To start, in a pressure cooker, heat the butter, put bay leaf, garlic, onion saute for 3 minutes
  2. Add carrot and beetroot pieces into it and saute for a minute
  3. put the tomatoes in
  4. Pour 1 cup of water, cover the lid, pressure cook for 3 whistles
  5. In a bowl, take 1 tsp of cornflour with little water, mix it without lumps
  6. When the pressure releases, open the lid, take off the bay leaf, let the tomato mixture cool.
Blending and Straining:
  1. Strain the tomato mixture, reserve the tomato stock, blend it into a smooth paste,
  2. Pour the blended tomato paste into strainer, mix it well with a spoon to extract the pulp
  3. Heat the filtered tomato mixture
  4. Pour the corn starch and mix it
  5. bring to a boil
  6. Add salt and sugar
  7. Add pepper while serving
For toasting bread:
  1. Cut the bread into square shape
  2. In a pan, add 1 tbsp of butter
  3. Toast the bread in medium flame
    Now the tomato soup and bread toast is ready

To begin with, heat the butter, add bay leaf and garlic (chopped)
Add chopped onion
Put carrot and beetroot
Now add chopped tomato

Add a cup of water

Meanwhile, dissolve 1tsp of cornflour with little bit water and keep aside

Open the lid after pressure released, let it cool for a while

pour this into a strainer

collect the pulp into a blender jar, keep the stalk in the bowl, blend this mixture to smooth paste

Again strain the ground paste

strain it by mixing

The final product, transfer this into the pressure cooker to heat

Heat the mixture, add cornflour water, add salt and sugar

bring into boil

Finally, garnish with coriander leaves

For toasting bread:

Put 1 tbsp of butter in a pan, toast the bread

Now the tomato soup and also bread toast are ready

Note:

  • Adding coriander leaves is optional so you can add basil leaves alternatively at the end instead of coriander leaves
  • Fresh cream can be used for garnishing as well as that.
