Beans Paruppu Usili | protein rich food recipe Basically, Paruppu usili can be made with dhal and veggies like beans, cluster beans, moringa keerai, plantain flower, cabbage, or even with bell peppers. This beans paruppu usili is a good nutritious side dish because beans have calcium, dhal has full of protein. It is a dry veggie side dish, this can be used with rice and sambar, rasam or rice and mor kuzhambhu. It is a traditional side dish (beans paruppu usili)in Tamilnadu.
Alternatives:
Here I have used, Kashmiri red chili, you can use two green chilies while grinding.
I crumble the steamed dhal in pan while cooking, In contrast, you can crumble it before you adding into the pan instead.

Beans Paruppu usili
Ingredients
For the dhal mixture to grind:
- 1/4 cup thor dhal
- 1/2 cup Channa dhal (split)
- 1 tsp cumin
- 3 Kashmiri Red Chili
- 1/4 tsp asafoetida
- 1/4 tsp turmeric powder
For Stir fry:
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp urad dhal
- curry leaves few
- 2 cups beans (chopped)
- salt to taste
- coriander leaves for garnish
Instructions
To grind the dhal:
- Add 3 red chilies alone in a blender jar, blend it coarsely
- Add cumin seeds, asafoetida, turmeric powder, and the soaked dhal, blend it coarsely by sprinkling water if it is needed
To Steam cook the dhal:
- Take a lemon sized dhal mixture, make it flat, place this in a steam plate/ idli plate
- Steam cook it for 10 minutes
For stir fry:
- Add 2 tbsp of oil, splutter mustard seeds, add urad dhal and curry leaves
- Add chopped beans and saute
- Add salt and mix well, add ¼ cup of water, cover and cook for 5 minutes
- open the lid add steam-cooked dhal, crumble it, mix well with beans for 5 minutes
- Turn off the flame, garnish with coriander leaves

note:
As we are using dhal 1/2 cup in total, and also, don’t skip the asafoetida
