kathrikai poriyal | brinjal fry | vankaya vellulli karam, It is a stir fry of brinjal in oil with garlic chilly and cumin. This side dish will be a nice combination with all the rice varieties and especially it goes well with curd rice. While cooking we are not adding any water, The brinjal slices are nicely stir-fried in oil. As we are using freshly ground spices, the dish turns out very tasty.

Ingredients Method

Ingredients
  

For grinding:
  • 5 garlic
  • 2 Kashmiri red chilly
  • 1 tsp cumin
For the brinjal stir fry:
  • 3 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp urad dal
  • few curry leaves
  • 250 gram brinjal
  • 1 tsp salt
  • ½ tsp turmeric powder

Method
 

For grinding:
  1. Firstly, take 5 garlic, 2 Kashmiri red chilly, 1 tsp cumin seeds in blender jar,
    Blend it coarsely and keep it aside for later use.
For the brinjal stir fry:
  1. Heat 3 tbsp of oil in a pan, splutter ½ tsp of mustard seeds, add ½ tsp of urad dal, and a few curry leaves.
  2. Then add brinjal slices and salt and ½ tsp of turmeric powder
  3. cook it in medium flame for 10 minutes (stir at regular intervals)
  4. (After 10 minutes the garlic pieces got cooked 90%), Now add the ground paste
    stir fry for about 5 minutes on low flame.
  5. And then turn off the flame. The brinjal stir fry is ready to serve
