Mint Pulao

Making Mint pulao is the easiest work, but also tastiest one. Everyone ll like pulao, when it comes to mint pulao that would be a favorite one to all. This pulao just with cucumber raita makes perfect food. Or even we can match this with any curry as well as that. and also, it is a perfect lunch box dish to pack.

In this recipe, I am going to cook using pot but also, this can be made using a pressure cooker too. Let us see how to make mint pulao.


Preparation time: 15 min

Cooking time: 25 min

Serves: 3 

Ingredients:

oil/ ghee – 2 tbsp

bay leaf -1

star anise – 1

cinnamon – 1 inch

Clove – 2

cardamom – 3

onion – 1

green chilly – 1

potato – 1 (diced)

green peas – 1/4 cup

garam masala – 1 tsp

Cashew nuts – 8

basmati rice – 1 cup

coconut milk – 2 cup

lemon juice – 1 tbsp

salt as required

To Grind:

Mint leaves – 1 cup

green chilly – 3

ginger – 1 inch  

Preparation Method:
  1. Firstly, soak the basmati rice for 20 minutes
  2. Secondly, grind ginger, mint leaves, green chilies into fine paste by adding little water.
  3. In a pressure cooker, heat ghee/oil
  4. Add cashews, fry it till it becomes golden color, and take off
  5. Saute the spices (bay leaf, cloves, cardamom, cinnamon, green chilly, star anise)
  6. Now add chopped onion, saute it till it becomes glossy
  7. Add chopped potato and peas, saute well for 5 minutes
  8. cover and cook for 5 minutes in low flame ( so that potato gets cook 50%)
  9. Pour ground paste and add garam masala powder mix well
  10. Add the basmati rice, mix well
  11. Pour 2 cups of coconut milk
  12. Bring into a boil in medium flame, once all the moisture goes off, keep the flame low, cover and cook for 10 minutes in dhum. (you can place dosa pan over the flame. then keep the pan over it)
  13. Open the lid once rice cooked well, finally, fluff it with fork or spoon, It’s done
Stepwise Picture Recipe:
Ingredients

Meanwhile, Blend 3 green chilies, 1-inch ginger, 1 cup mint leaves with little water

To begin with, Heat 2 tbsp of ghee

Secondly, Fry the cashews and take off

Thirdly, Add all the spices (star anise cinnamon, cloves, cardamom, bay leaf, green chilies), saute well
Saute onion till it becomes glossy

put potato and peas, saute for 5 minutes in medium flame

cover and cook for 5 minutes in low flame

Pour the ground paste and mix well

Add soaked rice, mix well
Mint Pulao
Pour 2 cups of coconut milk
now add 1 tbsp lemon juice, cover and cook till moisture goes off
Mint Pulao
water shrinks, At this stage, keep this pan over a dosa pan in low flame
this is how, keep a dosa pan on the stove, and keep the cooking pot over it.

Cook in low flame for 8- 10 minutes in dum

it’s done, fluff it with a spoon finally, and so, the rice will nonsticky.
  • Serve with love
Note:

Pressure cooker method:

If you are cooking in a pressure cooker, add 1 and 1/2 cup of coconut milk, and also, pressure cook for 1 whistle in medium flame

In addition, This pulao can be made with normal rice too

Furthermore, Adjust the spice level based on your taste
