recipe of veg | kadai bhindi | kadai vendakkai is a spicy, tangy flavourful side dish. It is made with bhindi, capsicum and onion tomato masala. It is a semi gravy, and also, it is a good combination for roti as well as rice, and pulao. with piping hot white rice with this (kadai bhindi)masala would be a mouthwatering combination for sure.

Ingredients
  

  • 25 number bhindi/ vendakkai/ ladys finger 350 gram
  • ½ cup capsicum cubes
  • 6 tbsp oil
  • 1 onion (chopped)
  • 1 tomato (chopped)
  • 2 garlic
  • 1 inch ginger
  • 10 number cashews
  • 1 tsp poppy seeds
  • coriander leaves for garnishing

For tempering:

  • 1 inch cinnamon
  • 1 bay leaf
  • 1 tsp cumin
  • 2 cloves
  • 2 cardamom

spice powders:

  • 3 tsp coriander powder
  • 2 tsp Kashmiri red chilly powder
  • ½ tsp cumin powder
  • ½ tsp garam masala powder
  • ¼ tsp amchur powder
  • ¼ tsp turmeric powder
  • salt to taste

Instructions
 

For frying bhindi and capsicum:

  • Heat 3 tbsp oil in a pan, add chopped bhindi/ lady's finger
  • saute it in low to medium flame for 10 minutes
  • Then take off the lady's finger (fried)
  • Add ½ tbsp of oil in the same pan, then add ½ cup chopped capsicum
  • saute it for 3 minutes and then collect it from the kadai, keep aside

For roasting and grinding:

  • In the same pan, add ½ tbsp of oil, heat it,
  • add chopped onion, 1-inch ginge,r 2 garlic. saute well
  • now add chopped tomato, saute well
  • After turning off the flame, add 1 tsp of poppy seed and 10 cashews
  • let this mixture to cool
  • transfer into a blender jar, blend it into a smooth paste with little water

For making Kadai bhindi:

  • Heat 2 tbsp of oil in a pan, add 1-inch cinnamon, 2 cloves, 2 cardamom, 1 tsp cumin
  • now add the ground paste, mix well in medium flame till it becomes half of the quantity (5 minutes)
  • Now add the spice powders.
    (3 tsp coriander powder, 2 tsp of Kashmiri red chili powder, ½ tsp of cumin powder, ½ tsp of garam masala powder, ¼ tsp of amchur powder, ¼ tsp of turmeric powder)
    mix well for 1 minute in medium flame
  • then add fried bhindi and capsicum, mix well
  • cook for 2 minutes in low flame
  • turn off the flame, garnish with coriander leaves

Stepwise Picture Recipe for – recipe of veg | kadai bhindi | kadai vendakkai:

First of all, Heat 3 tbsp oil in a pan,
secondly, add chopped bhindi/ lady’s finger
saute it in low to medium flame for 10 minutes
(it must be cooked well without losing its color)
transfer to a bowl

then add 1/2 tbsp more oil in the pan, add 1/2 cup of chopped capsicum (kadai bhindi)

saute it for 2 minutes then take off

Roasting and grinding (for kadai bhindi):

Add 1/2 tbsp of more oil, now add chopped onion and ginger and garlic
saute it till onion becomes translucent (kadai bhindi | kadai vendakkai recipe)
then add chopped tomato, saute till it becomes soft
Turn off the flame, add 10 cashews and 1 tsp of poppy seeds, mix it
transfer this into blender jar,
blend it smooth with little water

Add 2 tbsp of oil in a pan

add 1-inch cinnamon, 2 cloves, 1 bay leaf, 2 cardamoms, 1 tsp cumin

Now add in the ground paste, keep stir it in medium flame for 5 minutes

add in spice powders
(3 tsp coriander powder, 2 tsp of Kashmiri red chili powder, ½ tsp of cumin powder, ½ tsp of garam masala powder, ¼ tsp of amchur powder, ¼ tsp of turmeric powder)
mix well for 1 minute in medium flame

add in salt

mix well, keep it in low flame for 2 minutes,
turn off the flame, finally, garnish with coriander leaves

Note:

Above all, don’t pour in any water after you put the ladies’ finger in masala.

For cleaning and chopping the bhindi, firstly thoroughly wash it and after that, wipe it, and then chop

Furthermore, It does need a good amount of oil, decreasing the oil will not give you the taste and texture as desired.

Selecting the ladies’ finger:

Select tender ladies finger, selecting tender veggies not only applicable for ladies’ finger but also, for all other veggies (90%)

cleaning:

Cleaning running water would be great, drain the water or wipe off using a paper towel before you chop

storing:

Keep refrigerated always to keep it fresh. put inside the plastic cover or boxes while keeping inside the fridge.

chopping:

After the water completely drained, we can chop this veggie to our desirable size (medium or big), don’t it chop it thinly, and also discard the top and the edge portion of the ladies’ finger

cooking:
  • Using ladies finger, we can make curries like kadai bhindi , stir fry
  • For making curry, initially, saute it in oil to get rid of the sliminess
  • while you stir fry the ladies’ finger, keep the flame medium to high, fry it with a generous amount of oil. saute it till the veggie becomes soft and non-slimy. don’t add water
  • For sauteing the veggie, use a wide pan as well as a heavy-bottomed pan because wide and heavy-bottomed pans cook the ladies’ finger faster. non-stick pans also do its best (even to this kadai bhindi recipe, I have used wide and heavy-bottomed pan)
  • you can do this stir fry using the oven or air fryer too
