Ingredients
- 2 tbsp butter
- 2 garlic cloves
- 1 bay leaf
- 1 onion (chopped)
- 500 gram pumpkin (chopped) peeled off
- ½ tsp salt
- ½ tsp pepper powder
Instructions
- Firstly, heat the 2 tbsp of butter in a pressure cooker
- Add in the bay leaf and garlic cloves, saute
- Now add chopped onion and saute
- Then add chopped 500 gram pumpkin and saute
- Pour in 2 cups of water, cover the lid and pressure cook for 2 whistles
- open the lid and add ½ tsp of salt and ½ tsp pepper
- Take of the bay leaf from the pressure cooked pumpkin
- using a strainer, strain the cooked pumpkin, reserve the veggie stock for later use
- After the cooked pumpkin got cooled well, blend the cooked pumpkin smoothly
- transfer the pumpkin paste from blender jar to a container
- Now add in veggie stock 1 or 2 cups to pumpkin paste
- Garnish with cream, add salt and pepper if it is necessary
