We can use Carrot Rice as a lunch box food as well as breakfast food. The main ingredients which give the flavor in this rice are cumin powder and ghee. Carrot has a lot of health benefits. Making this rice is helpful in adding a good amount of carrot in our diet without a doubt.
Alterations:
- For spiciness, I have added the pepper, you can even add green chilies when you saute onion in the step2
- instead of ghee, you can add butter,
- Adding cashews is an optional
Things not be skipped:
- You must add the cumin powder if you don’t have cumin powder, just dry fry 1 tsp of cumin mildly then powder it using mortar and pestle
- You can add ghee or butter at the end. Don’t skip adding any of the ones.
Carrot rice
Ingredients
- 1 tbsp oil
- 1 star anise
- 1 bay leaf
- 1 tsp cumin
- 3 garlic cloves
- 1 onion (finely chopped)
- few curry leaves
- 2 cups carrot
- ¼ tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp pepper powder
- ¼ cup capsicum/bell pepper(chopped)
- 1 cup rice(cooked)
- 1 tbsp ghee
- salt to taste
- coriander leaves for garnish
- few cashew nuts (fried in ghee) (optional)
- 1/2 to 1 tsp pepper powder
Instructions
- Heat the oil in a pan, add bay leaf, splutter cumin, then add curry leaves
- Then add chopped garlic, onion, saute it turns into translucent
- put thinly shredded carrot and mix
- Add turmeric powder and salt, mix well,
- Now add cubes of capsicum and saute
- Put 1 tsp of cumin powder
- Add cooked rice along with pepper powder and ghee, mix well
- Add fried cashew nuts and coriander leaves.Now the carrot rice is ready

Note:
I have used basmati rice in this recipe, we can any type of rice like sona masuri, etc
Shredding the carrot thinly makes the carrot to cook fast
Instead of cashew we can add ground nuts too
