pudalanga thayir pachadi | snake gourd raita is one of the easiest recipes for rice as well as rotis. This would be a perfect recipe for bachelors to make in 15 minutes. Whenever I simply make dhal rice in a pressure cooker, I ‘ll make this pachadi. So this could be a perfect combination for most of the variety rice.

Ingredients Method

Ingredients
  

  • 1 tbsp coconut oil
  • ½ tap mustard seeds
  • ½ tsp cumin
  • ½ tsp urad dhal
  • few curry leaves
  • 2 green chilly
  • 1 tsp chopped ginger
  • 250 gram snake gourd (chopped)
  • ¼ tsp turmeric powder
  • salt to taste
  • 1 cup yogurt (curd)

Method
 

  1. Heat 1 tbsp of coconut oil in a pan
  2. splutter ½ tsp of mustard seeds, ½ tsp of cumin, ½ tsp of urad dhal
  3. Then add curry leaves, 2 green chilies and 1 tsp of chopped ginger, saute it for a while
  4. Now add chopped snake gourd, saute
  5. put ¼ tsp of turmeric powder and salt, mix well
  6. Add little water, 1 or 2 tbsp of water, cover and cook for 5 minutes (or until the veggie got cooked well)
  7. After snake gourd cooked well, turn off the flame, let it cool
  8. In a bowl, take 1 cup of beaten yogurt/ curd
  9. transfer the cooked snake gourd into the bowl containing curd, mix well
    It's done.

Stepwise Picture Recipe:

Heat 1 tbsp coconut oil,
splutter ½ tsp of mustard seeds, ½ tsp of cumin, ½ tsp of urad dhal

saute till urad dhal gets golden brown

Add 2 green chilly, few curry leaves
1 tsp of chopped ginger
saute for a while
now add chopped snake gourd, saute
then add 1/4 tsp of turmeric powder and salt, mix well
Add 1 or 2 tbsp of water
stir once or twice meanwhile
Keep the flame low
after the veggie got cooked well, turn off the flame, let it cool completely

take 1 cup of beaten curd/ yogurt in a bowl

Now add in cooked and cooled snake gourd

finally, mix well, and it is done

Serve with rice varieties, rotis
Choosing the veggie:
  • choosing tender snake gourd would be well and good in both ways of taste and health.
  • sometimes the veggie from climbers (Kodi kai) will give bitterness even though the outlook is perfect. While chopping, just taste one piece to ensure that is not bitter in taste and then proceed to cook
  • Always aware of adding the amount of salt, firstly add little bit salt, then you can adjust the amount of salt by tasting it
