Ingredients Method

Ingredients
  

  • 2 tbsp butter
  • 2 garlic cloves
  • 1 bay leaf
  • 1 onion (chopped)
  • 500 gram pumpkin (chopped) peeled off
  • ½ tsp salt
  • ½ tsp pepper powder

Method
 

  1. Firstly, heat the 2 tbsp of butter in a pressure cooker
  2. Add in the bay leaf and garlic cloves, saute
  3. Now add chopped onion and saute
  4. Then add chopped 500 gram pumpkin and saute
  5. Pour in 2 cups of water, cover the lid and pressure cook for 2 whistles
  6. open the lid and add ½ tsp of salt and ½ tsp pepper
  7. Take of the bay leaf from the pressure cooked pumpkin
  8. using a strainer, strain the cooked pumpkin, reserve the veggie stock for later use
  9. After the cooked pumpkin got cooled well, blend the cooked pumpkin smoothly
  10. transfer the pumpkin paste from blender jar to a container
  11. Now add in veggie stock 1 or 2 cups to pumpkin paste
  12. Garnish with cream, add salt and pepper if it is necessary

Note- no need to saute till it becomes glossy, just saute for a minute, that’s enough

take off the bay leaf

now add 1/2 tsp of salt

1/2 tsp of pepper powder, give a mix
strain the cooked pumpkin

blend the pumpkin into a smooth paste after it got cooled

transfer the pumpkin paste into a container
add the veggie stock 1 or 2 cups or more depends upon the consistency you need, mix well, it is done

Serving:

add salt and pepper if necessary at this stage
finally, garnish with fresh cream
serve with bread croutons or toast

Adding cream is optional, but if you add it the taste is so good
