sambar recipe | spring onion sambar | south indian sambar recipe, sambar with spring onion will be one of the tastiest sambars. Usually, the shallots or onions are used to make the sambar, especially the shallots mostly used in making the sambar. This spring sambar gives a unique flavor, so I haven’t added any veggies here. The sambar powder has its major part in making the sambar tasty. In this recipe, we are going to use freshly ground sambar powder.

Traditionally toor dal is used for making the sambar. But here I used toor dal and moong dal 1:1 ratio. Moreover, these mixed lentils are giving nice texture and taste.

Ingredients Method

Ingredients
  

For making sambar powder:
  • 1 tbsp coriander powder
  • 4 dry red chilly
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp cumin seeds
  • ½ tsp pepper
  • ¼ tsp fenugreek seeds
  • 2 tbsp dry coconut shred (desiccated coconut)
For pressure cooking dal:
  • ¼ cup Toor dal
  • ¼ cup moong dal
  • 3 garlic cloves
  • 2 cups water
for making sambar:
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • ⅛ tsp fenugreek seeds
  • 1 dry red chilly
  • few curry leaves
  • A pinch asafoetida
  • 5 spring onion (chopped)
  • 2 tomato (chopped)
  • ½ tsp turmeric powder
  • ½ cup tamarind extract
  • 2 cup water
  • 1 tsp grated jaggery jaggery powder

Method
 

To cook the dal:
  1. Take 1/4 cup of toor dal and 1/4 cup of moong dal, rinse in water. add these lentils into the pressure cooker.
  2. add 3 garlic
  3. Pour in 2 cups of water, pressure cook for 7 whistles
For making sambar powder:
  1. In a pan, add 1 tbsp of coriander powder, 4 dry red chilly, 1 tsp chana dal, 1 tsp of urad dal, ½ tsp of pepper, 1 tsp of cumin seeds, ¼ tsp of fenugreek seeds. Dry roast it for 2 minutes
  2. and then turn off the flame, add 2 tsp of dry coconut shred
  3. After it got cool down, Transfer the spice mixture into the blender jar, blend it into a fine powder. the sambar powder is ready.
For making sambar:
  1. Heat 2 tbsp of oil in a pan, add 1/2 tsp of mustard seeds, ¼ tsp cumin seeds, ⅛ tsp of fenugreek seeds, a spring of curry leaves, and a pinch of asafoetida
  2. Now add in chopped spring onions, saute it for 2 minutes,
  3. next, add in 2 tomatoes chopped, saute well
  4. now add ½ tsp of turmeric powder, and salt
  5. And then add the ground sambar powder, mix it for 30 seconds
  6. after that add in ¼ cup of tamarind extract, mix
  7. Now add in cooked dal and 2 cups of water, give a nice mix.
  8. let it boil for 5 minutes
    and then 1 tsp of jaggery
    turn off the flame
  9. garnish with chopped spring onions
Stepwise Picture Recipe:
I have taken 6 spring onions, cut off the root part and chop into medium sized pieces like this

For cooking dal:

For dal: I have taken, 1/4 cup of toor dal and 1/4 cup of moong dal
Rinse the dal well and add in to the pressure cooker
along with 3 garlic cloves + 2 cups of water
pressure cook for 7 whistles in medium flame
slightly mash the cooked dal with ladle, and keep aside

For making sambar powder:

In a pan, add 1 tbsp of coriander powder, 4 dry red chilly, 1 tsp chana dal, 1 tsp of urad dal, ½ tsp of pepper, 1 tsp of cumin seeds, ¼ tsp of fenugreek seeds.
Dry roast it for 2 minutes
After it got cool down, transfer the roasted spice mixture into a blender jar and add 2 tbsp of desiccated coconut (dry coconut),
Blend it into a fine powder
For making sambar:
Heat 2 tbsp of sesame oil in a pan

add 1/2 tsp of mustard seeds, ¼ tsp cumin seeds, ⅛ tsp of fenugreek seeds, a spring of curry leaves, and a pinch of asafoetida

And then add in chopped spring onion, saute for 1 minute in medium flame

Then add 2 tomatoes chopped along with 1/2 tsp of turmeric powder and 1/2 tsp of salt at this stage
saute for a while until the tomatoes get mushy
Now add in ground sambar powder.
Then add 1/2 cup of tamarind extract, mix
Next add cooked dal, mix
Pour in 2 cups of water

Boil it for 5 minutes in medium flame

finally add 1 tsp of grated jaggery, give a mix

and then add chopped spring onion for garnishing
