Ingredients
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin
- 3 green chilly finely chopped
- 2 garlic finely chopped
- ½ cup green peas
- ½ cup beans
- 1 cup fenugreek leaves finely chopped
- 1 cup rice cooked
- 1 tbsp lemon juice
- salt to taste
Instructions
- Heat 2 tbsp of oil in a pan, splutter 1 tsp of mustard seeds, 1 tsp of cumin seeds
- Next, add 3 green chilly (finely chopped), 2 garlic (finely chopped), saute for a while
- Then add 1/2 cup of green peas and 1/2 cup of beans, 1/2 tsp of salt saute for 5 minutes
- After that add in 1 cup of finely chopped fenugreek leaves, saute for 5 minutes
- Now add 1 cup rice cooked, mix well, add salt if necessary, that's it.

- In this fenugreek leaves rice, I have used frozen green peas and frozen beans, so it doesn’t take much time to be boiled, If you are going to use fresh peas and beans, make sure to cook super soft before adding the fenugreek leaves.
- Before adding the fenugreek leaves to saute, make sure the veggies got cooked well
- You can use up to 2 cups of fenugreek leaves, increase the quantity of lemon juice as you increase the fenugreek leaves
