Madurai pepper chicken masala | pepper chicken (chicken milagu varuval) is a spicy side dish for dal rice, chapati, etc. During monsoon season, this chicken would be a portion of wonderful food, as it contains pepper, it avoids catching cold and flu. There are so many varieties of pepper chicken recipes in south India. This is the one that belongs to the Madurai District. It is quite easy and simple, it requires no grinding spices. But the final product is spicy and tasty.

Before start to cook, wash the chicken thoroughly, marinate with salt and turmeric powder, keep it at least for 15 minutes, then wash the chicken again, drain off the water completely

Ingredients Method

Ingredients
  

  • 2 tbsp sesame oil
  • 1 tsp fennel seeds
  • 3 dry red chilly
  • few curry leaves
  • 1 onion thinly sliced
  • 1 tbsp ginger garlic paste
  • 500 gram chicken
  • ½ tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tomato
  • 2 tbsp water
  • 2 tsp pepper
  • salt to taste
  • 1 tbsp chopped coriander leaves

Method
 

  1. Firstly, heat 2 tbsp of oil in a pan, add 1 tsp fennel seeds, 3 dry red chilly, and a few curry leaves
  2. Secondly, add chopped onion and a little bit of salt, saute well, till the onion becomes soft and glossy, and then add ginger garlic paste, and saute
  3. Thirdly, add 500-gram washed chicken, saute well for 10 minutes in medium flame
  4. Next, add 2 tsp of coriander powder and 1/2 tsp of turmeric podwer, and mix.
  5. Then add chopped tomato and give a stir
  6. pour in 2 tbsp of water
  7. put the lid on, cook it for 10 minutes in medium flame (stir at regular interval)
  8. Next, open the lid, keep cooking for 10 minutes without any lid, or until the water evaporates
  9. When the water gets evaporated, put 2 tsp of pepper powder, and give a stir
  10. turn off the flame, put 1 tbsp of chopped coriander leaves

Firstly, heat 2 tbsp of oil in a pan, add 1 tsp fennel seeds, 3 dry red chilly, and a few curry leaves
Secondly, add chopped onion
and add a little bit of salt, saute well, till the onion becomes soft and glossy
add ginger garlic paste, and saute
Next add i washed chicken (500 gram), mix well for a while
Keep stirring at regular intervals in medium flame for about 10 minutes
Then add 1/2 tsp of turmeric powder and 2 tsp of coriander powder, give a stir
Now add 1 tomato chopped, give a mix
Now add 2 tbsp of water, mix well

put the lid on, cook it for 10 minutes in medium flame. (stir at regular intervals)

After 10 minutes, take off the lid, you can see the water content in the masala, so cook the chicken for another 10 minutes in open pot or till the water gets evaporated

when the water got evaporated, put 2 tsp of pepper powder and mix

Now turn off the flame

put chopped coriander leaves and serve
