milagu vadai | vada is a famous prasadham offered in Lord Hanuman Temple; Because Lord hanuman likes ulundhu(urad dhal) vadai, people made a garland using this vada in the number 108 or 1008. After the puja finished, vadas would be distributed to people in the temple. Hence it is believed as so auspicious thing in India. And also, this vada tastes spicy and tasty.

Ingredients Method

Ingredients
  

  • 1/2 cup urad dhal
  • 1 tsp pepper
  • 1/2 tsp cumin
  • 1 tbsp rice flour
  • 1 tsp hot oil
  • salt to taste

Method
 

  1. First of all, wash and rinse the urad dhal,
  2. soak the urad dhal for 30 minutes
  3. drain the water from the urad dhal
  4. Keep the urad dhal in colander/ strainer for 2 minutes to drain off the water completely
To blend:
  1. in a blender jar add 1 tsp of pepper, 1/2 tsp of cumin, grind it coarsely
  2. Then add the drained urad dhal
  3. Give 2,3 pulse using spoon mix well to make sure blade of blender jar not getting struck,
  4. Add 1 tsp of water for 3 times while you mixing with the spoon, pour at the bottom of the blender jar (not at the top)
    give pulse till urad dhal getting blended coarsely
Mixing the vada batter:
  1. Transfer the coarsely blended urad dhal into mixing bowl
  2. add 1tbsp of rice flour and salt (only less than 1 tsp needed), mix well
  3. Add 1 tsp of hot oil, mix well
    now the batter is ready
Making patties:
  1. Roll into a perfect ball
  2. Press at the centre to make small patties
  3. Grease a polythene sheet with 2,3 drops of oil
  4. Put at the polythene sheet, slightly press at the center
  5. Cover the upper side with polythene sheet, press using palm to make perfect patty
  6. Open the polythene sheet, put a hole in the center of the patty
  7. Take off from the sheet.
    It is ready for frying
For frying:
  1. Heat the oil in a pan
  2. put the patties you made
  3. fry it in medium flame till you get golden brown colored vada
Stepwise Picture Recipe:
Firstly, Soak the urad dhal for 30 minutes
Secondly, Put it in a colander or a strainer for 2 minutes to drain off the water

Thirdly, In a blender jar, take 1tsp of pepper, 1/2 tsp of cumin

Blend it coarsely ( see the method of blending in instruction, do it as per the instruction)
Transfer to mixing bowl
Add 1 tbsp of rice flour
and also, Add salt
Mix well

Pour 1 tsp of hot oil and mix well
Grease your hands with oil, Make a perfect ball
press it at the center
grease a polythene sheet with oil
place the vada dough gently
Cover it by the polythene sheet
Press it using palm

And also, Make a hole at the center

Take off

It is ready to fry

After oil gets heated, fry it in medium flame
milagu vadai
Finally, take off the vadas from the oil once it turns golden brown

now the vada is ready

Note:

While grinding urad dhal, I have added only 1tbsp (3tsp) of water, don’t add excess water. You must mix with a spoon while you are giving pulse so that, it will get blended evenly

Furthermore, use peppercorns depending on your taste

For patting vadas you can use plantain leaf, parchment paper(greaseproof paper) too. but apply some oil over it before you pat it because the dough will get stick over the sheet/ leaf

Fry it in medium flame to make it golden brown and to almost crisp
