Mint Rice is an aromatic rice, the smell of mint refreshes our body and mind. It is a good lunch box recipe. you can adjust the amount of chili based on the taste, this is the one that has a medium spice level recipe. There is so many version of rice using mint, this one is prepared with cooked rice. simple side dish like papad/vadagam nicely added with this rice for serving, because as it is most flavorful as well as tastiest one, we can make side dish as simple as that. veggie salad also good with this rice.

Mint Rice
Ingredients
For roasting and grinding:
- 1 tsp oil
- 3 Kashmiri red chili
- 1 inch ginger (small piece)
- peanut size tamarind
- 2 tbsp shredded coconut
- 1 cup mint leaves (tightly packed)
For Making Mint rice:
- 2 tbsp oil
- ½ tsp mustard seeds
- 1 tsp channa dhal
- 1 tsp urad dhal
- 1 Kashmiri red chili
- few curry leaves
- 1 onion (chopped)
- 1 cup rice (cooked)
- salt to taste
Instructions
For Roasting and grinding:
- Heat the oil in a pan, add Kashmiri red chili, ginger tamarind, coconut, saute for a minute
- Add mint leaves, saute it in low flame for 30 seconds
- Allow the mixture to cool
- Transfer the mixture to a blender jar, blend it into a smooth paste
For making Mint rice:
- Heat the oil in a pan, splutter mustard seeds, then add channa dhal, urad dhal, Kashmiri red chili, and curry leaves, saute it for a minute
- Add chopped onion, saute it till it becomes glossy
- Add the ground paste, mix it well
- Now add the cooked rice and salt, mix it evenly to get rice coated with mint paste, It is done
