ridge gourd recipe | ridge gourd dal. பீர்க்கங்காய் பருப்பு, (This veggie is called as peerkangai in Tamil) Dal with rice is always comforting food for cooking and eating as well. Dal is a main part of the south Indian lunch menu. This dal with ridge gourd is a good combination. Because this veggie combines nicely with the dal and makes the dal smooth and also slimy. Ridge gourd is a low rated veggie by many of us, I am sure this dal recipe will be good to make boring veggie into our favorite one. Even though Making ridge dal is a simple one, the dal is delicious with hot rice, chapati, and dosa or idlis.

While selecting the ridge gourd, select tender one (tender ridge gourd will be flexible when compare to matured one) the tender ridge gourd or young one will be easily identified by its appearance, the outer skin looks soft and flexible. Especially for making ridge gourd dal, we need tender one.

The matured ridge gourd is not good for cooking, it gives bitter taste too

Ingredients Method

Ingredients
  

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin
  • 2 dry red chilly
  • 2 green chilly
  • few curry leaves
  • 4 garlic cloves
  • 5 shallots
  • 1 tomato(chopped) (small-sized)
  • 1 ridge gourd (peeled, chopped)
  • 1 tsp red chilly powder
  • 1 tsp coriander powder
  • ¼ tsp turmeric powder
  • ½ cup thor dal (cooked)
  • coriander leaves for garnish
  • 1 tbsp ghee

Method
 

Cooking Thor dal:
  1. Firstly, take 1/2 cup of rinsed thor dal in a pressure cooker, pour in 2 cups of water
  2. pressure cook for 7 whistles in medium flame
  3. After pressure released, open the lid, keep aside for later use
Chopping the Ridge gourd:
  1. Firstly, peel off the ridges of ridge gourd and discard
  2. Then peel off the skin, (we can reserve this skin for making chutney)
  3. chop the ridge gourd into cubes.
Making Ridge gourd Dal:
  1. Heat 2 tbsp of oil in a pan, splutter 1 tsp of mustard seeds, and cumin seeds. Add in dry red chilly and green chilly, curry leaves, garlic cloves, shallots. saute well
  2. Next, add chopped ridge gourd, salt, saute well
  3. And then add 1 tsp of coriander powder and 1 tsp of chilly powder, 1/4 tsp of turmeric powder, just mix for 30 seconds in low flame
  4. next add 1 tomato chopped, mix well, cover and cook for 5 minutes
  5. then add cooked dal and mix well
  6. bring into boil, boil it for few minutes
  7. and then turn off the flame, add coriander leaves.
  8. Serve with rice with ghee.
    (and also with rotis too)
Stepwise-Picture Recipe for ridge gourd recipe | ridge gourd dal :

before starting to cook, ridge gourd dal, pressure cook the thor dal:

  • Firstly, take 1/2 cup of rinsed thor dal in a pressure cooker, pour in 2 cups of water
  • pressure cook for 7 whistles in medium flame
  • Open the lid after pressure got released naturally, and keep aside
Making Ridge gourd dal (ridge gourd recipe):

Firstly, Heat 2 tbsp of oil in a pan, splutter 1 tsp of mustard seeds, and cumin seeds. Add in dry red chilly
and then green chilly, curry leaves
garlic cloves, shallots. saute well

Now add the ridge gourd (peeled and chopped), saute
Next add 1-tomato chopped
now add in salt
1/2 tsp of turmeric powder
1 tbsp of sambar powder
saute for 30 seconds in low flame
pour in 1/2 cup of water
cover and cook well in low flame for 5 minutes (or until ridge gourd becomes soft)

Next add in 1/2 cup thor dal cooked, mix
pour in 1/2 cup of water to dilute it,
bring into boil, boil it well for few minutes

turn off the flame, finally, add 1 tbsp of chopped coriander leaves

Serve ridge gourd dal with little ghee with rice

Now the ridge gourd dal is ready.

How to peel & chop the ridge gourd for all the ridge gourd recipe :
I have taken 250 gram ridge gourd, which is tender
Firstly, peel off the ridges

Secondly, discard those ridges (it will be hard to cook, so we don’t want it)
Thirdly, peel off the skin (preserve those ridge gourd skin for making chutney,
ridge gourd peel chutney)

Fourthly, cut the ridge gourd into small pieces

Note:
