bottle gourd kurma Simple, delicious bottle gourd kurma perfectly goes with roti and dosa, you can use it even for rice too, whenever we buy bottle gourd we usually do kootu or sambar, this dish makes unique taste and flavor that makes ourself to do repeated times.

Ingredients Method

Ingredients
  

For grinding:
  • 1 cup Shredded coconut
  • 2 green chilly
  • 2 tbsp roasted gram
  • 1 tsp fennel seeds
  • 1 tsp poppy seeeds
To cook
  • 2 tbsp oil
  • 1 star anise
  • 1 bay leaf
  • 3 cloves
  • 1 inch cinnamon
  • 3 cardamom
  • 1 Marathi mokku
  • few curry leaves
  • 1 tbsp ginger-garlic paste
  • 1 onion
  • 1 tomato
  • 1 tbsp coriander powder
  • 1 cup water
  • salt to taste
  • coriander leaves for garnish

Method
 

to grind
  1. Grind all the ingredients mentioned to be ground, with little water
To cook:
  1. Heat the oil in a pan, add spices one by one (star anise, cloves, bay leaf, cardamom, Marathi mokku), then add curry leaves
  2. Next, add onion and saute
  3. And then, add ginger-garlic paste, saute
  4. Now, add bottle gourd, salt and turmeric powder, Saute for a few minutes
  5. Add coriander powder
  6. Pour in 1/4 cup of water, cover and cook for 5 minutes (for the tomato to be mashed)
  7. Add ground paste, add about 1 cup of water to dilute, in this stage add salt if it is needed. Bring into boil
  8. Turn off the flame, garnish with chopped coriander leaves

Stepwise Picture Recipe:

Grinding:

take all the ingredients with little water to grind,
grind into a smooth paste

Chopping the bottle gourd:

mostly sorakka would be big, I have used only half of that
peel off
Firstly, cut vertically first
clear the seed cum fibrous portion
cut into cubes
it is ready
Heat the oil in a pan, add the spices, curry leaves, chilly + ginger garlic and saute
Add chopped onion and saute till turns into translucent
Then, add chopped bottle gourd and saute
also, add chopped tomato and saute

add salt and turmeric (put only little salt)

pour in 1/4 cup of water

cover and cook till it becomes mushy

Now add coriander powder and mix well

Add ground paste

pour in 1 cup of water in a blender jar

add into the pan and mix well

Bring into a boil, finally, garnish with coriander leaves
