tamil food recipes | raw mango kulambu is a spicy, tangy curry for lunch, also can be used for idli/ dosa as a side dish. Mango is a seasonal fruit. When we get this veggie in abundance, we can make pickles, chutney, curries, etc. Choosing completely green and firm mangoes opt to make making this ( tamil food recipes | raw mango kulambu ) curry. Depending on the sourness of the mango, we can adjust the quantity of tamarind extract and chilly powder.

chopping the mango: While chopping the mangoes, make big dices so that the mango pieces nicely visible in the curry. If you make small pieces, mango pieces will get mashed in the curry.

Ingredients Method

Ingredients
  

To make coconut paste:
  • ½ cup Shredded coconut
  • 1 tsp cumin
To make mango kulambu:
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ¼ tsp fenugreek seeds
  • 2 green chilly
  • 4 garlic cloves
  • few curry leaves
  • 50 gram shallots (small onion)
  • 1 mango (diced into cubes)
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 4 tsp Kashmiri red chilly powder
  • 2 tomato(chopped)
  • ½ cup tamarind extract
  • 1 cup water
  • salt to taste

Method
 

To make coconut paste:
  1. In a blender jar, take ½ cup of shredded coconut and 1 tsp of cumin seeds
    Blend it into a fine paste with enough water
    Keep aside
To make mango kulambu:
  1. Heat 2 tbsp of oil in a pan, splutter ½ tsp of mustard seeds, ½ tsp of cumin, ¼ tsp of fenugreek seeds, 2 green chilies, few curry leaves, 3 garlic chopped, 50 grams of shallots
    saute well until the shallots become translucant
  2. Now add in mango pieces and saute for 1 minute
  3. Next, add in spice powders, 1/2 tsp of turmeric powder, 1 tbsp of coriander powder, 4 tsp of Kashmiri red chilly powder, mix well in low flame for 30 seconds
  4. And then, add in 2 tomatoes chopped, saute well until it becomes mushy
  5. Now pour in 1/2 cup of tamarind extract and 1/2 cup of water
  6. Mix well. cover it with a lid and cook it for 5 minutes on medium flame
  7. Next, add in ground paste along with 1/2 cup of water, boil it for 5 more minutes on low flame.
  8. finally, turn off the flame and garnish with coriander leaves

Now pour in 1/2 cup of tamarind extract and 1/2 cup of water, Mix well. cover it with a lid and cook it for 5 minutes on medium flame
Next, add in ground paste

Give a mix

boil it for 5 more minutes on low flame.

finally, turn off the flame and garnish with coriander leaves, (Optional: you can add 1 tsp of jaggery at this stage)
