mushroom kulambu | mushroom curry Planning to have spicy rich, tasty curry for rice or rotis? This curry would be a good option for that idea. In this curry the main ingredients of whole spices like cloves cinnamon, fennel seeds will be ground with onion and coconut to get the masala to be fresh.

Ingredients
  

For roasting and grinding:

  • 2 tbsp oil
  • 2 tsp fennel seeds
  • 2 inch cinnamon
  • 4 cloves
  • 3 garlic cloves
  • 1 inch ginger
  • 1 string curry leaves
  • 1 onion chopped
  • 2 tsp poppy seeds
  • ½ cup coconut shredded

For making curry:

  • 2 tbsp oil
  • 1 star anise
  • 1 bay leaf
  • 50 gram shallots (4 to 5 shallots) (or 1 onion chopped)
  • 2 green chilly
  • 200 gram mushroom chopped
  • 1 tbsp coriander powder
  • 2 tsp Kashmiri red chili powder
  • ¼ tsp garam masala powder
  • ¼ tsp turmeric powder
  • 1 tomato chopped
  • 2½ cup water
  • salt as required
  • coriander leaves for garnish

Instructions
 

For roasting and grinding:

  • firstly, heat 2 tbsp of oil in a pan, add 2 tsp fennel seeds, 2-inch cinnamon stick, 4 cloves
  • And then add 3 garlic, 1 inch ginger, saute for a while
  • Now add curry leaves, and chopped onion, saute well till onion becomes transperant
  • After onion got sauteed well, add 2 tsp of poppy seeds, saute well in low flame
  • Then add ½ cup of shredded coconut, keep the flame low, saute for 1 minute
  • let this mixture cool completely
  • transfer this roasted mixture to a blender jar, add little water, blend it finely

For making curry:

  • heat 2 tbsp of oil in a pan, add 1-star anise and 1 bay leaf, 2 green chilly, and 50-gram shallots, saute well till shallots become soft and glossy
  • After that add chopped (200 gram) mushroom, saute in medium flame for 1 minute
  • And then add spice powders: 1 tbsp coriander powder, 2 tsp Kashmiri red chilly powder, ¼ tsp garam masala, ¼ tsp turmeric powder, and salt. just mix it for 30 seconds in very low flame
  • now add 1 tomato (chopped), saute well for 3 minutes, till becomes soft in low flame
  • Add ground paste mix, and then pour in 2½ cup of water
  • cover it with lid for 10 minutes in low flame
  • after 10 minutes, open the lid turn off the flame, garnish with coriander leaves

Ingredients for Roasting and grinding+ Curry leaves

oil-2 tbsp, 2 tsp-fennel seeds, 2-inch cinnamon, 4-cloves, 3 garlic cloves, 1-inch ginger, 2- tsp poppy seeds, 1/2 – cup coconut(shredded), 1-string curry leaves
firstly, heat 2 tbsp of oil in a pan, add 2 tsp fennel seeds, 2-inch cinnamon stick, 4 cloves,
3 garlic cloves (chopped), 1-inch ginger, saute for a while
Secondly, add curry leaves and 1 – chopped onion, saute it till onion becomes glossy

Now add 2 tsp of poppy seeds, saute it low flame for 30 seconds
(you can hear the spluttering sound due to the poppy seed)
Blend it with little water

For making mushroom kulambu | mushroom curry:

Heat 2 tbsp of oil
Add 1 bay leaf, 1-star anise, 2 green chilly, 50-gram shallots (4to5)
saute it till shallots become glossy

and then add chopped 200-gram mushroom, saute it for 1minute

Add the spice powders mentioned in the picture
+salt, mix all the spice powders well for 30 seconds in very low flame
now add 1 tomato chopped, saute it till it becomes soft
Add in ground paste, give a mix
pour in 2 1/2 cup of water, mix well

After opening the lid, give a mix, turn of the flame,
Finally, garnish with coriander leaves
Serve with rice, rotis, idli/ dosa

Note:
  • Furthermore, Saute the mushroom well with tomato before adding the ground paste
  • Make the fine paste of roasted mixture with patience, if it is not ground finely, In the same vein, we can’t get smooth textured curry
