It is a chutney from the vegetable scrap. broccoli stalk chutney | broccoli stem chutney is healthy chutney from the vegetable scrap. The stems of broccoli are as nutritious as broccoli florets. But we would often throw this stem as it is hard. so from now on, don’t throw it just use it to make chutney.

Ingredients
  

  • 1 tbsp oil
  • 2 tsp urad dal
  • 3 dry red chilly
  • 1 onion(chopped)
  • 2 garlic pods
  • 1 broccoli stalk (thinly sliced)
  • 1 tomato (chopped)
  • a small piece of tamarind

for sesaoning:

  • ½ tbsp oil
  • ½ tsp mustard
  • 1 dry red chilly
  • A pinch of asafoetida
  • curry leaves

Instructions
 

  • Heat 1 tbsp of oil in a pan, add in 2 tsp of urad dal, 3 dry chilly, onion, 2 garlic pods. saute
  • Next, add thinly sliced broccoli stem tomato and tamarind
  • saute it till the broccoli stem becomes soft, then turn off the flame
  • Let this mixture to cool
  • transfer it to a blender jar, blend it finely with salt and water
  • pour it in a serving bowl

for seasoning:

  • Heat ½ tbsp of oil, splutter mustard seeds, add dry red chilly, turn off the flame, now add asafoetida and curry leaves
  • pour this mixture over the chutney and give good mix before serving

Stepwise Picture Recipe:

I have taken 1 medium-sized broccoli
broccoli stalk chutney | broccoli stem chutney
cut off the florets
Take the stem portion, cut into small / thin pieces
Heat 2 tbsp of oil in a pan, add 2 tsp of urad dal, 3 dry red chilly, 1 garlic clove, 1 small piece of tamarind
Next add 1 onion chopped, saute it till it becomes translucent

Then add broccoli stem chopped, saute it till till becomes soft

Add the 1- tomato chopped, saute with salt
broccoli stalk chutney | broccoli stem chutney
Let this mixture to cool down

transfer it to a blender jar, blend int into smooth paste
broccoli stalk chutney | broccoli stem chutney
Transfer it into a serving bowl

season it with a tsp of oil, mustard, curry leaves and asafoetida, gently pour over the chutney
