ridge gourd skin chutney is a chutney made with peel or skin of ridge gourd. It is another chutney with vegetable scrap (like broccoli stem chutney). The skin of this veggie is as nutrition as a ridge gourd. It contains more fiber. We can store the skin in a polythene cover in the fridge for 3 days. It remains fresh until we make chutney.
The best way to use the ridge gourd is by using after peeled off. Because the ridge gourd with the skin will be hard-textured when we make curry or stir fry. so we make chutney with this

ridge gourd skin chutney
Ingredients
- 1 tbsp oil
- 2 tsp chana dal
- 2 tsp urad dal
- 2 tsp sesame seeds
- 2 dry red chilly
- 2 inch tamarind piece
- ridge gourd skin
For seasoning:
- 2 tsp oil
- ½ tsp mustard seeds
- ¼ tsp urad dal
- few curry leaves
- a pinch asafoetida
Instructions
- Heat 1 tbsp of oil in a pan, add in 2 tsp of chana dal 2 tsp of urad dal, 2 tsp of sesame seeds, 2 dry red chilly, tamarind, saute well
- Next, add chopped ridge gourd skin, saute till it becomes soft
- then add in 1/2 cup of shredded coconut, mix well
- turn off the flame, wait for it to cool, transfer this into a blender jar
- Blend it into a smooth paste, transfer it to a serving bowl
For seasoning:
- heat 1 tsp of oil in a pan, splutter mustard seeds, next add urad dal, once it becomes golden brown, turn off the flame, now add a pinch of asafoetida and curry leaves
- Pour this seasoning mixture over the chutney
