ridge gourd skin chutney

ridge gourd skin chutney is a chutney made with peel or skin of ridge gourd. It is another chutney with vegetable scrap (like broccoli stem chutney). The skin of this veggie is as nutrition as a ridge gourd. It contains more fiber. We can store the skin in a polythene cover in the fridge for 3 days. It remains fresh until we make chutney.

The best way to use the ridge gourd is by using after peeled off. Because the ridge gourd with the skin will be hard-textured when we make curry or stir fry. so we make chutney with this

Ingredients Method

Ingredients
  

  • 1 tbsp oil
  • 2 tsp chana dal
  • 2 tsp urad dal
  • 2 tsp sesame seeds
  • 2 dry red chilly
  • 2 inch tamarind piece
  • ridge gourd skin
For seasoning:
  • 2 tsp oil
  • ½ tsp mustard seeds
  • ¼ tsp urad dal
  • few curry leaves
  • a pinch asafoetida

Method
 

  1. Heat 1 tbsp of oil in a pan, add in 2 tsp of chana dal 2 tsp of urad dal, 2 tsp of sesame seeds, 2 dry red chilly, tamarind, saute well
  2. Next, add chopped ridge gourd skin, saute till it becomes soft
  3. then add in 1/2 cup of shredded coconut, mix well
  4. turn off the flame, wait for it to cool, transfer this into a blender jar
  5. Blend it into a smooth paste, transfer it to a serving bowl
For seasoning:
  1. heat 1 tsp of oil in a pan, splutter mustard seeds, next add urad dal, once it becomes golden brown, turn off the flame, now add a pinch of asafoetida and curry leaves
  2. Pour this seasoning mixture over the chutney
Stepwise-Picture Recipe for ridge gourd skin chutney:

peel off ridge gourd:

I have taken 250 gram ridge gourd
Firstly, peel off the ridges using a peeler
Secondly, Discard those ridges
thirdly, peel off the ridge gourd nicely
Fourthly, chop the peels into small pieces
Heat 1 tbsp of oil in a pan, add in 2 tsp of chana dal 2 tsp of urad dal, 2 tsp of sesame seeds, 2 dry red chilly, tamarind, saute well

saute it well, (until the dals becomes crisp

Next add in skin of the ridge gourd, saute well

saute atleast for 5 minutes

Now add 1/2 cup coconut,

then mix turn off the flame
after it got cool down, transfer into a blender jar, blend finely with little water and salt.

transfer the chutney into serving bowl

heat 1 tsp of oil in a pan, splutter mustard seeds, next add urad dal, once it becomes golden brown, turn off the flame, now add a pinch of asafoetida and curry leaves. then pour in seasoning mixture in the chutney

Serve it with idli, dosa
