dessert recipe easy | sorakkai payasam is a dessert that differs in the taste of seviyan kheer, but it looks like seviyan kheer. It is a simple recipe. Whenever we think to make kheer but with different forms and tastes, we can make this. And also it is a seasonal veggie, in the season we can make it different dishes like kheer, bottle gourd vada, etc. This is the kheer recipe we can make instantly, without boiling dals, soaking ingredients, etc. Choose a tender bottle gourd for this kheer, not the matured ones. It is a good choice of dessert for special occasions and even for birthday parties. we can add a pinch of saffron strands in it

Ingredients Method

Ingredients
  

  • 2 tbsp ghee
  • 1 tbsp cashews
  • 1 tbsp almonds
  • 1 tbsp raisins
  • 2 cup shredded bottle gourd 500gram bottle gourd
  • 1 litre milk
  • ½ tsp cardamom powder

Method
 

shredding the bottle gourd:
  1. Firstly peel the bottle gourd nicely,
  2. Secondly, scrap the seed portion from it
  3. once the all the seed portion removed completely, it is ready to grate
  4. Grate it with large sized holes in the grater
Making Bottle gourd kheer:
  1. Firstly, heat 2 tbsp of ghee in a heavy-bottomed pan (or non-stick pan). roast the cashews and almonds, and take off.
    Next fry the raisins to swell up
  2. In the same pan with remaining ghee, add in grated bottle gourd, saute it for 5 minutes in medium flame
  3. Now pour in 1 litre of milk, bring into a boil, and then reduce the flame to medium, stir occasionally
  4. Heat it for 15 minutes by keeping the flame medium
  5. And then add ½ cup of sugar, stir well
  6. Again keep the flame medium for 5 minutes (stir occasionally)
  7. turn off the flame then add ½ tsp of cardamom powder and mix
    Next add fried nuts and raisins
    Give a mix

heat 2 tbsp of ghee in heavy-bottomed pan (or non-stick pan)

Add in 1 tbsp of cashews and 1 tbsp of almonds (chopped), roast it till it becomes golden brown

And then take off
Now add in 1 tbsp of raisins
fry it till it becomes fluffy
take off and keep aside
Now add our peeled, deseeded, shredded 2 cups of bottle gourd
Now saute for 5 minutes in medium flame till all the raw smell goes off

And then add 1- litre milk

Heat it in medium flame for 15 minutes

stir meanwhile to avoid scorching

then add 1/2 cup of sugar

again heat it for 5 minutes,
Then turn off the flame

And then add 1/2 tsp of cardamom powder, mix well

Next, add in fried nuts and raisins

Serve it in hot or cold condition
