chandrakala & suryakala are flour-based milk sweets. It is stuffed with Kova/ khoya with nuts. The outer layer covered with flour along with sugar syrup. It is a very delicious sweet that can be prepared in Deepavali as well as other festivals. Suryakala means the art of sun, Chandrakala means the art of crescent (moon), When we look at the steps it looks like a big process, but all those are simple and easy steps. It is a Deepavali sweet, and also It is a perfect sweet for other special occasions. Most of the time we usually buy this chandrakala & suryakala sweet in the shops. This is a perfect failproof recipe that anyone can make.

Ingredients Method

Ingredients
  

For making dough:
  • 1 cup all-purpose flour
  • 1 pinch salt
  • 1 tbsp melted butter (or ghee)
  • water as required
for grinding:
  • 1 tbsp almonds
  • 1 tbsp pistachios
  • 1 tbsp cashews
for kova-nuts stuffing:
  • ½ cup milk
  • ½ cup milk powder
  • ¼ cup sugar
For sugar syrup:
  • 1 cup sugar
  • ½ cup water
  • ¼ tsp cardamom powder
  • a pinch saffron strands
  • 1 tsp lemon juice
Other:
  • oil for deep frying

Method
 

For making dough:
  1. In a mixing bowl, take 1 cup of all-purpose flour, a pinch of salt. Mix well
  2. Next, add 1 tbsp of melted butter, mix well till it reaches crumbled texture
  3. then add water little by little, knead for 5 minutes to make a stiff dough (like poori dough)
  4. cover and rest it for 30 minutes
for grinding:
  1. In a blender jar, add in 1 tbsp of almonds, 1 tbsp of pistachios, 1 tbsp of cashews, blend it finely and keep aside
for kova-nuts stuffing:
  1. Heat 1/2 cup of milk in a pan, bring into a boil
  2. then add in 1/2 cup of milk powder, mix well
  3. Next, add ground nuts mixture along with 1/4 cup of sugar
  4. Heat it in medium-low flame, till it thickens
  5. And then take off, transfer to a bowl, let it cool
Assembling dough and kova nuts stuffing:
  1. In a rolling pad, apply some ghee over it
  2. Take the dough, divide into 2 halves, roll into medium thin sheet,
  3. using cookie cutter or small bowl, make small discs
  4. for suryakala: take one disc, place a small kova-nuts ball, cover it by the another disc
    seal over the edge,

  5. for chandrakala: take one disc, place oval-shaped small kova-nuts mixture, cover it by the other half

for sugar syrup:
  1. In a pan, add 1/2 cup of water and 1 cup of sugar
  2. Heat it till reaches 1/2 string consistency
    while you check using your fingers, the string formed by the sugar syrup must be broken in half-way when you stretch
    (heat it for 5 minutes)
  3. then add 1/4 tsp of cardamom powder, and a pinch of saffron strands mix well
  4. Now add 1 tsp of lemon juice and mix well
    Keep aside
frying:
  1. Heat the oil in a pan, then reduce into medium flame, gently drop the assembled chandrakala and suryakala, fry it to golden brown color and then take off
Dipping in sugar syrup:
  1. Straight away dip the fried chandrakala and suryakala in sugar syrup for 5 minutes
  2. then take off and serve
Stepwise Picture Recipe for chandrakala & suryakala:
In a mixing bowl, take 1 cup of all-purpose flour, a pinch of salt.

Next, add 1 tbsp of melted butter, mix well till it reaches crumbled texture (or you can use ghee too)
add water little by little to make stiff dough (roughly it needs 1/4 cup of water
cover and rest it for 30 minutes

grinding nuts:

take 1 tbsp of almonds, 1 tbsp pistachios, 1 tbsp of cashews, blend it finely
for kova-nuts stuffing:
Heat 1/2 cup of milk, bring into a boil
Now add 1/2 cup of milk powder
mix well
add in ground nuts
and 1/4 cup of sugar, mix well in low flame until it becomes thick
add a tsp of ghee and mix well
It done
transfer into a bowl, let it cool
apply ghee or oil on a rolling pad
take the dough, (after 30 minutes)

divide into 2 halves (so that it is easy to roll)

roll into medium thick sheet

take a cookie cutter or small bowl like this to make perfect circles
place a circle shaped rolled sheet, place a small disc of kova nuts stuffing, cover it by one more sheet

make twist and seal repeatedly

suryakala is ready to fry

Making sugar syrup for chandrakala & suryakala:

chadrakala & suryakala
take 1/2 cup of water in a pan, add 1 cup of sugar
chadrakala & suryakala
boil it for 5 minutes in medium flame to 1/2 string consistency, then turn off the flame
chadrakala & suryakala
add 1/4 tsp of cardamom powder
chadrakala & suryakala
a pinch of saffron and and 1 tsp of lemon juice, mix well
chadrakala & suryakala
Heat the oil in a pan, then reduce the flame into medium , gently drop the chandrakala and suryakala
chadrakala & suryakala
fry it in medium flame to golden brown
chadrakala & suryakala
then take off

dipping in sugar syrup:

chadrakala & suryakala
place it in sugar syrup for 5 minutes and take off

Now the chandrakala & suryakala sweet is ready serve

Note:

Kova-nuts filling: Do not over fill the kova nuts mixture, it might come out while frying.

Rolling: Rolling the dough into medium thick sheet will be good

Sugar syrup: Lemon juice is added to avoid crystallisation. If it may happened (froming crystals) just re heat it for few seconds

You can serve chandrakala & suryakala immediately, but, this sweet (chandrakala & suryakala) tastes good after 12 hours of preparation
