kesari recipe|aval kesari | poha sheera or poha halwa is an easy dessert, we can make it in 15 minutes. and also, it is a neivedhyam sweet. It is a traditional sweet offered to the god in Krishna Jayanthi puja. The texture will be similar to the rava kesari but the taste even more delicious than rava kesari. If we want to make sweets in a jiffy while we are craving for some sweets, this aval kesari recipe will help us.

What we call it as kesari, halwa or sheera, is called as pudding in western countries. They also have a list of pudding varieties like us. This Aval kesari is smooth textured, will melt in the mouth. The addition of saffron and ghee gives the kesari recipe | aval kesari | poha kesari a good aromatic. With these very few ingredients work has done in minutes. We can prepare this sweet (Aval kesari ) for Ganesh Chaturthi too.

choosing poha/ aval:

We can use white aval/ poha or red aval/ poha for this recipe,

and also, thick aval/ poha or thin aval/ poha

sugar:

I have added 1 cup of raw sugar, if you are going to use white sugar add 3/4 cup

Instead of sugar, you can use jaggery too

Ingredients Method

Ingredients
  

  • 1 cup thick aval poha / flattened rice
  • ¼ cup ghee + 1tbsp ghee
  • 1 tbsp cashews
  • 1 tbsp raisins
  • 2 cup water
  • 1 cup sugar
  • a pinch saffron strands
  • ½ tsp cardamom powder

Method
 

Dry roasting and blending:
  1. firstly, take 1 cup of aval/poha in a thick bottomed pan, dry roast it for 3 minutes in medium flame
  2. And then cool it, transfer it to a blender jar, blend it coarsely, keep aside
Making aval kesari/ poha sheera
  1. Heat ¼ cup of ghee in a pan, roast the cashew and raisins, take off and keep aside
  2. In the same pan with ghee, pour in 2 cups of water, bring into a boil
  3. Now add a pinch of saffron
  4. Then add ground aval/ poha, mix well
  5. Keep stirring in medium flame
  6. Once it the aval got thickened, add in 1 cup of sugar, and mix well
  7. Keep stirring until it reaches the thick consistency
  8. when it becomes thick, add 1 tbsp of ghee, mix well
  9. finally when it leaves the pan and gathers as a mass, turn off the flame, put cardamom powder and fried cashews, and raisins. mix well

Stepwise-Picture Recipe for aval kesari | poha sheera | poha halwa:

Dry roastiong and blending aval/ poha:

firstly, take 1 cup of aval/poha in a thick bottomed pan,
dry roast it for 3 minutes in medium flame
transfer it to blender jar, after it get cool
blend coarsely

Making (kesari recipe)aval kesari | poha sheera:

Heat 1/4 cup of ghee in a pan
roast cashews first and then raisins and take off and keep aside.
In the same pan with remaining ghee, pour in 2 cups of water, bring into a boil
add a pinch of saffron
now add ground aval/ poha
mix well, keep stirring in low-medium flame

Aval thickens, once it get thick and smooth

add 1 cup of sugar, mix well

Keep the flame low at this stage

sugar melts and the mixture becomes syrupy

when the aval-sugar becomes thick add 1 tbsp of ghee, mix (kesari recipe)

when the aval kesari/ sheera, gathers as a mass, leaves the pan, turn off the flame, add 1/2 tsp cardamom powder, mix well

and add fried cashews and raisins, give a quick mix, it is done.

then serve (delicious aval kesari is ready, we can serve it warm or at normal room temperature)

Note:

Instead of saffron, you can add yellow or orange food colour for colour, But if make it with raw sugar we don’t need any colour.

Keep the flame low to medium at levels to avoid getting burnt.
